One of my ALL TIME Favorite Comfort Foods is risotto. I love it there is something about the process of making it and the rich yummy goodness that comes with it. I adore Nigella and had to become a part of I HEART COOKING CLUBS because they are featuring my girl! I became rather obsessed with Risotto after making Nigella’s Lemon Risotto in my fav cookbook Nigella Bites! As much as I love her rather long version of this recipe I have come up with a MICROWAVE version that is fantastic! I use all the great flavors that Nigella uses just in a quick cook version. I do omit the raw egg yolk as I have a tot and well, I just leave it out now. Sorry.
1/2 sweet onion, chopped fine
2 Tb butter
2 Tb olive oil
Put this in a large microwave safe bowl and nuke for 3 mins. Then add:
1 cup Arborio rice
2 3/4 c chicken broth (you may need a little more broth to add at end)
1/4 c white wine
Cover tightly with plastic wrap and nuke for 9 mins, remove & swirl bowl without uncovering and cook 9 more mins. Remove, discard wrap & stir in 1/4 cup to 1/2 cup more broth . Add:
1/4 c Parmesan Cheese
1/4 c half and half
juice & zest from 1/2 lemon
fresh cracked pepper
1/2 tsp tarragon, thyme or rosemary

I had my eye on lemon risotto too, it sounds heavenly. Great idea to adapt it to a quickie version for busy nights!

I love risotto too, but I have never had a lemon flavored risotto. It sounds delicious!
I didn’t know you could microwave this. I have never cooked risotto because the chefs on TV make it look so hard. I think I can make this. Merry Christmas, Doylene
