Souper Sunday

This morning I was watching Giada and she was making a soup with leftover lettuce and potatoes. I thought umm, I have a large baking potato in my fridge as well as 1/2 bag of fresh spinach, think I am going to make my version of this soup.
EVOO
1 onion, diced
1 lg baking potato, diced
4 small red potatoes, diced
1 carrot, diced
1 box (4 cups) chicken broth
1 tsp dill
dash of nutmeg
s & p to taste (be sure to salt potatoes as your cooking or it will way more once it’s cooked)
2 cups fresh spinach
1/2 c cream
Goat Cheese for garnish
Soften onions in evoo, add potatoes & carrots, cook 2 mins then add broth  and spices cook apx 20 mins till potatoes are fork tender. Add spinach to wilt. Add cream and blend with imersion blender or put in your blender serve with a dallop of goat cheese or sour cream.
