Rosie’s PINKALICIOUS Cherry Cupcakes was a recipe that just screamed my name!! I am not typically a fan of artificial fruit flavoring but these cupcakes are just YUMMY!! I followed Rosie’s recipe and I got almost 3 dozen cupcakes.
For the frosting I decided that I would continue with my “testing” and make Cherry Chocolate Cream Cheese Frosting. Can you say DELISH? OMG I just love this frosting. I wanted just a hint, a back note of chocolate to bring out the cherry flavor.
Cherry Chocolate Cream Cheese Frosting
1 stick butter, softened
1 8oz block cream cheese, softened
1 tsp vanilla extract
4 T cherry juice
1 T good cocoa powder
3-4 cups confectioners sugar, added 1/2 cup at a time to desired consistency
Whip butter and cream cheese until light & fluffy add cherry juice, vanilla & cocoa powder; mix well. Slowly add sugar a little at a time until the perfect consistency appears!
This was a great recipe and I love how they work great for Valentine’s Day!! So cute!
