Meal Planning { a month at a time…}

I am back to my Meal Planning and so excited to take on the challenge of planning an entire months worth of food. I shopped the sales that Harris Teeter had on beef, seafood, chicken etc. I got some fantab deals! I surveyed my freezer/pantry/fridge and took inventory. I have enough food to plan meals for the entire month!! Now, granted I will have to buy a few ingredients for certain meals but the majority of the months food is in my freezer! yip-eeeeeeee

Why? You ask, would I try to do this? It saves tons of money and time and did I mention MONEY!!

I also got a huge head start by stocking a few if my fav items from Trader Joe’s like Mandarin Orange Chicken, which is $6 and is better than any Chinese take-out! A few of the Bambino mini frozen pizzas, also excellent and make for a quick dinner  when the boys are home alone! The next thing I do is make a HUGE batch of Spaghetti Sauce, then freeze it in dinner portions and make a few lasagnas or baked ziti to also freeze.  I make a huge batch of Veggie Soup and/or Chili also to freeze and pull out for a quick easy meal.  So with the BOGO options on Stew Beef, ground turkey, Flank steak, BOG2 on chicken breast and shrimp you too can get your ENTIRE months worth of meals in 1 weekend!!

Monday~ Braised Pork with apricots and onions {Martha inspired; NEW Recipe}

Tuesday~ Tacos

Wednesday~ Baked Ziti or Mandarin Chicken (Boys pick!)

Thursday~ Pop’s Stew Beef

Friday~ Family Night Out

Saturday~ Birthday Party

Sunday~ who knows?
