Teacher Appreciation Week

Mercy, I can not believe that it is almost that time again! The end of the year. Seems like yesterday we went to “HEY DAY”  and now after losing both the original teachers, having many, many subs we have 2 sweet teachers to express our appreciation too!

I have a few ideas and as always I starting searching through blog land to find some more fun ideas for teacher gifts.  A few of MY personal favorites are

Frosting for a Cause

I can’t recall how I actually found Frosting for a Cause, I stumbled I guess upon it in one of nights spent researching cupcakes and I was so intrigued. I have been personally affected by cancer in so many ways and I want this post to honor all of those I have loved and lost and those who have so courageously battled this and are winning!!
Mimi my full of life grandma who is next to my son, my most favorite person I have ever had the pleasure of knowing. She had a radical double mastectomy when she was in her 30’s and lived until she was 89 Cancer free. She loved to tell everyone she baked, the crazy thing was she never actually baked!! She was the first female buyer that Belk Dept stores ever had this was in the 50’s she was a pioneer. She was a career woman who had a chic hat for every single occasion. She only wore a hat once. I have everyone!! Back to the cakes. Being that she was known by every woman in the Charlotte area she knew all the best bakers and she would claim these women”s cakes as her own! Shame!! I make all my cakes, but like her I love to entertain and sharing food is my way of sharing love.

I recently participated in Cupcakes for Cures (www.cupcakesforcure.com) at Grove Park Inn in Asheville NC. I am hoping to help start Cupcakes for Cures in the Charlotte Metro area and I would love for all of you to help start one in your area. It was a great success and gives 100% of the proceeds to American Cancer Society.
Today in honor of my Mimi who had some great rules to live by a “toddy a day, will keep you looking young and staying sain”. How true that is!

Pina Colada Cupcakes
I took my favorite vanilla cupcake and switched up the liquid, added some fruit and boy was it a success!!
3 cups flour
2 cups sugar
2 tsp baking soda
2 sticks soften butter
4 eggs
¾ cup coconut milk
¼ cup coconut rum
1 tsp vanilla
1 small can crushed pineapple
Preheat oven to 350. Mix coconut milk, rum, vanilla and juice from pineapples; set aside. Sift flour, sugar, powder; cream in butter. Rotate between milk mix and eggs. Stir in pineapple. Makes 2 to 3 dozen. Bake 20-22 mins at 350.

Especially for Robby. Robby is 9 and has Ewing Sarcoma. Robby has touched me in a way that I can’t really explain. He and his family take my breath away. I am truly having trouble getting this out I am so gut retched about how a family holds it together  faith, family, friends.
If you pray I ask that you add Robby to your nightly prayer. I do believe in prayer and I know The Casky Family does too. Their strength astounds me.

Cherry Vanilla Pepsi Cupcakes

Thanks to Annie Eats I found this yummy recipe that I adapted a little to fit the theme of PEPSI!! Some dear friends are celebrating the upcoming nuptials of the heir to to the local Pepsi thrown!

For the  topper/décor I wanted something that would be fun and still go with the Pepsi theme I came up with a little soda bottle gummy candy, sugared cherries and Pepsi bottle caps. I glue gunned tooth picks to the back! I think they turned out super cute!!

The cupcake was quit good, very similar to a red velvet just a lighter cake.

Mad for {Science}

A few weeks ago I did a party post with the Mad Science theme. I was scouting out cake and party ideas for Hayden. He is really into science, which I think is so cool!  I love how it turned out! Everything but the 2 vials are edible!!

Southern Shrimp Curry

This is a STELLAR dish, if I do say so myself! DELISH! It is so easy and will appear to those who are lucky enough to eat it that you spent hours slaving away in the kitchen! oozes love.
1 lb shrimp peeled and deveined
sprinkle shrimp with salt & pepper and the juice from 1/2 lemon; sit in fridge until ready to use
1/2 onion, chopped fine
1 T olive oil
1/2 to 1 cup salsa
1 can butter beans, corn & tomato mix (Margret Holmes makes a great succotash combo that I used)
2 t curry powder (I use 1 tsp Madras & 1 tsp Dean & Deluca)
1/4 c white wine (opt)
1/4 c chicken broth (or 1/2 c if you prefer not to use wine)
1/2 can lite coconut milk
Soften onions in olive oil; add salsa & bean mix, wine & broth cook on low while preparing rice or risotto to pair with. Add shrimp; cook until nice and pink, stir in coconut milk. Serve with rice or risotto. YUM!!
