Mema’s Potato/Tomato Soup {Souper Sunday}




SOUPER SUNDAY IS BACK!!!!!
After a really fun weekend in the mountains, watching football and even seeing some SNOW!! I thought Memama’s  Potato/Tomato Soup would be a yummy end to a great weekend.  It is a super easy soup and very forgiving. In other words you don’t need to stress. It always taste a bit different and I don’t think she has ever made it the exact same way twice!

3 medium baking potatoes, diced
1 lg onion, diced
3 ribs of celery, sliced
Cover with water and a teaspoon of salt. Simmer until cooked.

In sauce pan mix:
2 T butter
2 T flour
2 c milk
1 T worcestershire sauce
1/2 c catsup
3 T mustard
Melt butter, mix in flour, add milk & mix well (adjust to make thick) Blend in remaining ingredients and stir for 5 mins. Add to potato mix and add 2 cans whole tomatoes (rough chopped).
It gets better the longer it sits! And it makes a ton! I hope you enjoy as it sure reminds me of my Mema.

Trick or Treat {ideas}

WOW Halloween is almost here! I can not believe it! And to beat all they are calling for snow showers on Saturday! I thought I would share a few of my Halloween treats from the past as the past few weeks have just been insane! Hubs has been in New Mexico for work and every time I pick up the phone I seem to get bad news. Enough, of my pity party! LETS TALK PUMPKIN!!!

Taco Casserole

1 small bag (8oz) of Pepperidge Farm Cornbread stuffing mix

1 can cream corn

1/4 to 1/2 c water

1 lb ground turkey or beef

1/2 onion, diced

1 pkg taco seasoning mix

1 can black beans, drained

1can ro-tel, drained

1/2 c Mexican cheese, shredded

Mix together stuffing, corn & water. Press into bottom of 9x13 casserole dish (or if you have a small family like me make 2 square pans and eat one and freeze one for later!!) Brown ground turkey and onions add seasoning, spread over top, sprinkle with black beans and ro-tel. Top with cheese. Bake at 400 for 20 mins. Serve with sour cream and salsa. YUM!!
