Chaz’s Ooey Gooey Mac & Cheese



Chaz is a great friend who I used to work with years ago who has a gift in the kitchen, he makes the yummiest foods and this ooey gooey Mac & Cheese is positivitely sinful. This is a perfect dish to fix when you are feeding a ton of friends and family and want them to feel loved! This my friends is comfort food at its finest. Loaded with flavor this mac & cheese will be the hit at your next church pot luck or family gathering! This is the most requested side dish at all my family gatherings! As you can see (above) it looks great on the retro buffet (stove top!) I know you will enjoy!

Chaz’s Oooey Gooey Mac & Cheese

2 lb box your favorite pasta

1 stick of butter

16 0z sour cream

1 cup milk

1 lg block Velvetta

2 cans cream of mushroom soup

1 can cream of chicken

2 bags shredded sharp cheddar cheese, 1 reserved for topping

Butter your (very large) baking dish, cook pasta apx 2/3 of suggested time, drain and add butter, milk and velvetta, pasta will continue to cook, add soups, 1 nag shredded cheese and sour cream, layer pasta mixture, sprinkle with shredded cheese, repeat as many layers as you can and top with remaining shredded cheese.  Bake in 350 oven until golden brown, and cheeses are oozing to the top! SINFUL! You can thank me later!!

Sesame Noodles & Asian Salmon

Ever since we lost Harris Teeter, I have been on a quest for the perfect cold Sesame Noodles.

They  are one of my favorite things that I have never been able to get right?

UNTIL NOW!! Yip-eeeeee!

And here is how I did it!

I scoured the internet looking for recipes and as I do,

 I took bits and pieces from my inspriations and put my own recipe together that I am going to share here with you!

Sesame Noodles

1 lb  thin spaghetti, cooked al dente’ as the soy breaks down the noodles and they will get gummy.

1 red pepper, cut in thin strips

1 bunch of scallions, chopped

1 T toasted sesame seeds


1/3 c rice wine vinegar

1/3 c soy sauce

2 T siracha

2 T honey

1 T peanut butter

1 T fresh grated ginger

3 T sesame oil

1/2 c canola oil

Mix everything together, taste for seasonings. This will make a ton of dressing but, please trust me the noodles will  absorb the dressing, and you need it!

COLD OVEN  Asian Salmon

Simply make extra of the above “dressing” minus the peanut butter and double the honey

marinate the salmon a few hours

place the salmon in a cold oven

set to 400 and timer for 25 mins.

Bucatini with Clam Sauce

A few weeks ago my girlfriend Meredyth shared with me her daughters favorite “celebration meal” and I was in love with the idea of something that sounds so decant yet, is so quick and easy to make!! Can you say score?! This is a beautiful dish that you can have on the table in under 30 mins!

Bucatini with clams

1 lb your favorite pasta cooked al dente, reserve 1/4 cup pasta water

1 T butter

1 T olive oil

2 cloves fresh garlic, chopped

dash of salt

dash of crushed red pepper (to taste)

1 onion, chopped

1 cup white wine

1- 14 oz can diced tomatoes

3-  6.5 oz cans chopped clams with juice

several handfuls of fresh spinach

Cook pasta and set to side, reserving a little pasta water. Chop onion and saute’ in olive oil/butter combo till soften add garlic soften a few mins, add diced tomatoes and juice, white wine, then add clams with juice, stiring well, top with fresh spinach and cover for 5 mins. Allow to steam pour mix over hot pasta and ENJOY!
