Day 2 Gluten & Dairy Free

Day 2 started off just fine, Jack was excited to have bacon! He loves the smell but, oddly prefers his undercooked (gag). I packed another great snack and we met friends for a picnic in the park and play date and he ate a decent amount of lunch. For dinner I have the crock pot going with chicken breast and salsa (family fav) and so the challenge continues. I ran into the grocery to pickup some Chex cereal and a few other things and when I walked in it was like the bakery was screaming at me! The bagles, muffins and such have never looked as good as they did today! Why? Why is it that anytime you try and tell yourself NOT to do to something that is all you want? UGH!  It gets me every time! Oh well, so far so good. Haven’t wanted to kill anyone, am SUPER tired but think that maybe a lack of the carbs and all that junk that peps up your blood sugar? Maybe? Guess we shall see!!

Breakfast: Nussentials shake (me) Bacon & apple (jack)Lunch: 2 slices of Boar’s Head Ham, carrot sticks, fruit (jack) Big green salad with carrots, turkey, cucumbers & egg

Dinner: Salsa Chicken, corn tortillas, homemade guacamole

Day 1 {gluten & dairy free}

Day 1: No Gluten No Dairy!

We started today off right!  I must say that it takes a little, no a lot, of extra thought to cook and eat gluten free.  I am super relieved to be able to use chicken broth and canned tomatoes. I use these in oodles of recipes. Here is what we ate today! 


Breakfast: 2 slices bacon & an apple (jack)

               I had a Nussentials shake

Snack: hummus, carrot sticks & cherry tomatoes

Lunch: 2 Van’s blueberry waffles

Snack: popcorn

Dinner: Pumpkin Chili with corn tortilla chips

Day 1 wasn’t bad at all, like I said just had to THINK a lot more than I am used to. I was excited to find more things that are gluten free!

Gluten & Dairy FREE

Adios, see-ya, uh BYE BYE gluten and dairy.

Yep, I have lost my mind, I am a nervous wreck, but I gotta do it.  I have wanted to for a long time and I have finally decided that life ain’t getting any easier. If you are going to do something, JUST DO IT!

My family and I are starting a 21 day gluten and dairy free life. I am going to do a daily update for a few reasons. 1. I have to shout it to the world what I am doing so that I will ACTUALLY DO IT! 2. Everyone wants to know IF it can be done 3. I can’t wait to see how I am feeling and looking. 

What I think will happen after 21 days.

I think I will:

have lost 15 lbs

no allergies

stomach issues

sleep better

feel happier

I think Jack will:

be calmer

listen better

eliminate allergies

& stomach issues

I am SO EXCITED to see how this journey goes!!

lifestyle changes {gluten & dairy free}

Boy ole boy is this true. I am venturing into a whole new relm here.  Long story short I have had stomach issues ever since I can remember. Tried all sorts if meds nothing has ever helped except when  I was on a really strict diet that ironically was very, very limited if any in wheat, gluten and dairy. I also had NO sinus infections no colds nothing!Well, jack is starting to have lots of snot, allergies and stomach issues (he is 5).  So, we are going to do a 21 day challenge to get all the gluten, wheat, dairy ie, sugar, bread, pasta, cupcakes ( I am seriously questioning if I can bake?) out of the house!!!

How am I going to start? First thing I did was called my bff Denise Stewart of Charlottesville Wellness to ask her professional opinion if this is a good idea, how to get started, all the details! She is great and if you need help call her!

Next, this has to be planned, researched, grocery shopped as to make the next 3 weeks as simple as possible. What CAN we eat? Starting SUNDAY I will share my families 21 days of eating GFDF. Pics, recipes etc…  Hope you will pop back by to see how this going.
