Maple Bacon Cupcakes

Thanks to Vanilla Garlic I am testing the much talked about Maple Bacon Cupcakes. I been who doesn’t love bacon? I do!
With all this snow I am bored out of my gourd and thought this is a perfect time to give it a try!!
I followed the recipe from Vanilla Garlic although I did add 1 tsp vanilla to the batter.
Frosting: {adapted from Vanilla Garlic’s recipe} I doubled the butter/sugar ratio and liked much better as I found it to be be way to sweet. Corse Sea Salt is also great on the top!
1 stick softened butter
2 T maple syrup
1 T milk
1 t vanilla
2 c powdered sugar
I also topped the cupcakes with crumbled bacon.
My humble opinion; the the cake is super light, fluffy, great texture, although I didn’t care for the bacon crunch in the cake. The frosting was great. I do caution ONLY make this with REAL Maple Syrup. For testing purposes I used The Fresh Market 100% real maple syrup. It was great. IF I make these again I may leave the bacon out of the batter? I don’t know, I wish I could get more opinions on the taste of these. But, we are snowed in.

Caramelized Onion & Bacon Quiche


It has been WAY to long since I made quiche. I love it but typically do not think about it unless I am planning brunch. My inspiration came from the bacon leftover from breakfast. This recipe will fill 2 regular size pie shells.

4 eggs

1 1/4 cup half & half

1 onion, sliced & caramelized

5-6 slices of crumbled crisp bacon

1 cup chopped broccoli

1 cup shredded cheese

Caramelize onions in 1 T butter & 1 T olive oil, saute on high for a few mins to get a golden color then add dash of salt and turn to low. After the are softened and looking yummy add 1 tsp balsamic vinegar. I know you are thinking a whole onion is alot but this:

P4110034 cooks down and turns into this:P4110035 Whisk eggs & half & half with salt & pepper to taste. Stir in broccoli, cheese, onions and bacon. Pour into pie shells add a little sprinkle of grated cheese to top and bake on 375 for 30 mins or until golden brown.
