Blueberry Lemon Zucchini Cake  


So yesterday a foodie friend shared a recipe that looked so good, but zucchini in a cake? Bread yes, ok why not! I use all sorts of fruits in cake but hadn’t used veggies, until now! 

So here’s the recipe I saw on Facebook from I Am Baker that was my inspiration, I switched it up a little based on my likes and what I had on hand. Y’all know that’s how I roll. 

Started with my mixer, again I’m lazy. And went to baking. 

4 eggs

1/2 cup oil 

2 cups sugar

3 tsp vanilla 

Zest of one lemon 

2 1/2 c shredded zucchini (drained) 

Mix gingerly, and then add the remaining ingredients 

3 cups flour

1/4 tsp baking soda

1 tsp baking powder 

1 tsp salt 

Add flour a 1/2 cup at a time, give a stir and repeat. 

1 pint (2 cups) fresh blueberries 

Fold into cake batter. Pour into 2 greased cake pans. 

Bake at 350 35-45 min until cake pulls away from edges and passes the toothpick test! 


Lemon Buttercream:

2 sticks butter 

Apx 3 cups powdered sugar

Juice and zest from 1 lemon 

1 tsp vanilla extract 

Mix everything taste and add more sugar if you need it! 

Enjoy.

Citrus is one of my favorite things!

and this cake is AMAZING!

I made it in 3 layers as the added height gives presence!

and I love presence!

Meyer lemon cake:

3 c flour

2 tsp baking powder

1/2 tsp baking soda

2 1/2 c sugar

1 c butter, softened

5 eggs

2 tsp vanilla

1/4 c meyer lemon juice

3/4 c milk

zest from meyer lemon

In stand mixer add all dry ingredients and blend for a few mins to lighten up. Add softened butter and mix until just mixed. Add vanilla to milk & juice and add a little liquid then egg and rotate ending with milk mixture.

Put in greased & floured cake pans. Bake 350 for 35-45mins

Meyer Lemon Cream Frosting:
1 8 oz cream cheese, softened

1/2 stick butter, softened

1 tsp vanilla

1 T orange juice

zest from 1 lemon

4 to 6 c powdered sugar

Cream all ingredients except sugar with mixer and slowly add sugar 1/2 c at a time.

*Clementine, orange, lime any citrus  may be substituted for meyer lemon what ever you have on hand.

Power Rangers { wedding }

I am always so blessed to be a part of  celebrations. I even feel  more blessed to get calls from past clients to share in even more family celebrations!  I met these two when I was doing {} sister’s wedding last year. They were the taste testers!

The story that led to this cake is just so cute! B & G  have been best friends since they were little kids and they were obsessed with the Mighty Morphin Power Rangers. He was the red, she the pink. This is my “grown up” Power Ranger cake with fondant pink & red flowers and hand made fondant Power Rangers.  The cake and cupcakes were Red Velvet with a cream cheese frosting.
