Apple Cake

IMAG0026

On Friday j’s class went on a field trip to Apple Hill Orchard in Morganton, NC. It is a great place and the kids love it! Part of the fun is that you get to bring home a bag of apples. I adapted a recipe that I found in Pull Up a Chair  from the Lenoir Service League. You can make this cake in a Bundt pan (my fav way) or in a muffin tin. You also can frost these or not. They are wonderful both ways. Obviously more like a cupcake if they have frosting and a muffin without.

Apple Hill Orchard Country Store

How cute is the General Store? They have TO DIE FOR Apple Muffins that remind me a lot of this recipe. They sprinkle the top with brown sugar!! YUM and they also make Fantab Apple Cider Delish!

Fresh Apple Cake

2 c sugar

2 t vanilla

juice from 1 lemon

3 c flour

11/2 t baking soda

1/2 t salt

3 c chopped apples

cream oil, sugar, vanilla, and lemon juice with mixer. Add eggs, combine well after each egg.  Mix dry ingredients and slowly add to egg mixture. Stir in apples and pour into a greased bundt pan or into cupcake liners. Bake at 325 for 1 1/2 hours.

Rock Star 1st Birthday!

How much fun did I have doing the “Rock Star” themed birthday party this weekend? TONS!!!
P5080081
I did a big guitar cake for all the guests at G-man’s Party and this adorable smash cake for the Birthday Boy!  His cake was a banana pound cake with chocolate frosting and the guitar was a choco-chocolate cake with peanut butter frosting. OMG it is MY new fav! De-fricking lish!!

Best EVER Peanut Butter Frosting

1 stick of butter
1 8 oz cream cheese
1 cup peanut butter
1 t vanilla extract
1 32 oz bag powdered sugar
Cream all ingredients, but sugar. Slowly add powdered sugar in 1/2 cup increments.  Sometimes you will use the whole bag, sometimes more, sometimes less. I think it has to do with the humidity. Which here in NC we already have had 90 degree sticky days and I am finding I am using more sugar in all my frosting recipes. Who knows?
For G’s cake I used red fondant stars and threaded craft wire between 2 stars and sealed with a little vodka! I know you must have just gasped! It was literally less than a drop! I read somewhere that we working with fondant using alcohol opposed to water would seal quicker as the alcohol evaporates and the water just makes a sticky mess. It worked! I made them around midnight last night and the were perfect this morning!! And didn’t they turn out cute! I am posting another pic cause I just love it!!

This is the biggest cake I have ever made! I started with a basic chocolate cake recipe, tripled it and added my secret ingredients. I added clementine zest, orange juice & a little Gran Marnier to the recipe and then made Orange Cream Cheese Frosting. YUM!!

CJ LOVES Star Wars and I was so excited to make cupcakes for his party at school and a cake the party at home with his buddies! I thought for my 1st time working with fondant I was pretty successful! Raspberry Lemonade Cupcakes

IMG00279

My dear friend Becca wanted some Valentine Cupcake and told me I had free reign! Woo-wee this is a DELISH recipe.

Raspberry Lemonade Cupcakes

1 stick of butter

3/4 cup sugar

3 eggs

1 1/2 c flour

1 tsp baking powder

3/4 c milk

2 pks of raspberry lemonade (on the go pks)

Cream butter, sugar & eggs. Slowly add flour/baking soda mix and milk & rasp-lemonade mix rotating between the two.  Line your cupcake pan and bake at 350 12-15mins. Let cool before frosting.  (this makes 1 dozen cupcakes)

Raspberry Lemonade Frosting

1 stick of butter

1 (8oz) cream cheese

1 pkt of rasp/lemonade0(on the go pk)

2-3 cups powdered sugar

Cream butter & cream cheese, add rasp/lemonade pkt and sugar and additional coloring if you wish!

They are so freaking DELISH!!!

Valentine’s Cupcakes

P2011855 Since we are still stuck at home I thought it would be fun to make some cupcakes. Jack LOVED using the mixer and he really enjoyed adding the food coloring to the frosting.

IMG00278

Kat’s Fav Frosting

1 stick butter

1 8oz pkg cream cheese

1 tsp vanilla

3 c powdered sugar

Allow butter & cream cheese to come to room temperature. Cream with mixer, add vanilla and powdered sugar 1/2 c at a time. If you are making the frosting only 1 color I advise to add the food coloring before the sugar. (It seems to give a really even color) That being said I typically am doing at least 2 colors with a batch and add the color at the end. Whatever works for you!
