Carrot Apple Cupcakes


I looked through tons of recipes and combined bits and pieces from several different recipes  and came up with an AMAZING cupcake!! I am making these for my favorite women in the World! My very dearest girlfriends in the whole world who I have had the pleasure of knowing for 22 years!!! WOW. We live in many different places and take the time as often as we can to reconnect and recharge and share in our joys. Tomorrow night we gather to celebrate a new career and a new baby! Congrats to Mer and Rae!! I am so happy for you both!!!

Carrot Apple Cupcakes

3 cups flour

2 cups sugar

2 tsp baking powder

2 tsp baking soda

1 tsp cinnamon

2 tsp unsweetened cocoa powder

1 cup vegetable oil

4 large eggs

1 cup milk with 2 tsp lemon juice (let sit 10 mins)

2 cups grated carrots

2 cups grated granny smith apples

1 T grated orange zest

Bake at 350 for 17-20mins. Cool and Frost.


8 oz fresh mild goat cheese (high quality)

8 oz cream cheese, softened

1/2 stick butter, softened

2 T fresh orange juice

1 T orange zest

4 cups powdered sugar

Carrots, carrots & more carrots

Fan-tab carrots! I, who would tell you that I do not even care for cooked carrots have found & of course adapted to fit my fam a terrific and oh so easy little side dish that goes with practically everything.
1 lb bag of mini carrots
1 Tb butter
1 Tb brown sugar
2 tsp fresh grated ginger
sea salt & fresh ground pepper
In large preferably non-stick skillet, melt butter, add sugar then ginger & carrots. Season with salt & pepper saute for 2 min then add 1 cup water bring to boil and cook until fork tender. Liquid will reduce a make a syrup. They are yum-eeee. My 2 yr old LOVED these, he kept asking for more!
