Cooking with Ms.Kat {Apple Butter}

This months Cooking with Ms. Kat is an APPLE theme! It goes along great with last weeks fieldtrip to Apple Hill Orchard. And I thought it would be something fun! I tinkered with this recipe for several days and after several batches I found what I think is YUMMY!

Ms. Kat’s Crockpot Apple Butter:

this easily doubles, triples, etc….

1 dozen apples*

3/4 cup brown sugar

4 cloves

1 t cinnamon

1 lemon zest and juice

1/4 to 1/2 cup orange juice

apple chunks

Peel. Core. Blitz Apples in food processor. Put in crockpot. Add brown sugar, cinnamon, cloves, juices and zest. Stir well. Set crockpot on low for 10 hrs. Next, prop open lid to crock and set on low for additional 4 to 8 hrs depending on texture and type of apples.

*I used a mix of apples. I used Gala, Fuji, Granny Smith, Golden Delicious, play around and find what you like best!

Potato Soup {crockpot}


Yummy! There is nothing better than walking in the door to a house with a warm, ready to eat dinner sitting on the counter! Hence. my love of the crockpot!! Today I made one of the easiest potato soups ever! Just dump, shake, stir, dump again, stir again, set on low and voila a few hours later a meal!


CHOP: 
1 onion
1 carrot
1 stalk of celery 
DUMP into crockpot 
1 can cream of chicken*
1 can cream of mushroom
2 cans chicken broth*
1 can of milk
SHAKE:
salt, pepper, garlic
Worcestershire sauce
hot sauce
all to taste
STIR
DUMP:
1 pkg frozen hash brown potatoes (cubes are my favm shredded works fine too)
STIR, again!

Jen Cooks {Crockpot Wednesday}

Jen is at it again!! A yummy crockpot recipe that is easy and different!! I LOVE the idea of wrapping the chops in their own little package and I am always looking for a “new” way to prepare pork chops, this is a great idea. Would be lovely for a dinner party as well. Thanks Jen!!

4 pork chops

1 jar of apricot jam

salt & pepper

2 granny smith apples

1 cup brandy

Place each pork chop on a sheet of tinfoil; add salt, pepper, spoonful of jam, 4 slices of apples,  wrap package up leaving one end open, pour Brandy in. (Apx 1/4 to  1/3 cup) seal other end. place in crockpot and cook on low 8 hours.

Italian Drip Beef {Crockpot Wednesday}

Woo- weeee Crockpot Wednesday is back! With School starting for lots of friends  (next week for us!) I love to share as many go-to recipes that make your family dinner quick and easy!!

This is a recipe that my dear friend and Crockpot Queen Jen shared with me and YOU!! ENJOY!

Italian Drip Beef

1 whole beef chuck roast

1 onion, chunked

1 can beef consommé or beef broth

3 tablespoon Italian seasoning (I used Good Seasons Salad Dressing)

salt & pepper

garlic powder

1/4 cup water, red wine or white wine

8 oz pepperoncini peppers, with juice

throw all in the cockpot cook on low all day!

Serve with: rolls and provolone cheese for a great steak sammie!!

{crockpot} Blushing Chicken

This is a super quick take on my creation Blushing Chicken. I just threw the main components in the crock pot and headed out the door!

Boneless/skinless chicken breast

1/2 c white wine

1/2 c chicken broth

1/4 c raspberry jam

Trader Joe’s 21 Seasoning Salute (spice blend)

Sprinkle chicken breast with spice. Mix all other ingredients in bowl and pour over top of chicken.  Great with steamed broccoli.

Pumpkin Chili

CoolClips_vc100642 For this edition of Souper Sunday it is Halloween week and it’s all about the PUMPKIN!! I am so excited to re-share my friend Michelle’s Pumpkin Chili Recipe. It may inspire you to whip up something fun for Halloween!! It is so odd, I know, but really yummy!! Give it a try!!

1 T. canola oil

1 onion, diced

1 clove garlic, minced

1 1/2 lb. lean ground beef or turkey (I used turkey)

1  can cannellini beans

1 can black beans

2- 28 oz. chopped tomatoes (I like a ton of tomatoes)

1 can  pumpkin (NOT pumpkin pie filling!!)

7 oz. chopped green chilies

1 can chicken broth

1 T. cumin

1 T. chili powder

1 t. sugar

1 t. salt

1/2 t. cinnamon

1 t. unsweetened cocoa

Saute garlic and onion in oil. Add meat and brown. Add remaining ingredients, cover; simmer for approx. an hour- stirring occasionally. This also works great in the crock pot. Enjoy!!

Harvest Pork Tenderloin {Crockpot}

I was inspired this week to do ALL new recipes! I found a yummy looking pork recipe and thought it would be great. My goal was to use meat from the freezer and groceries I had on hand so as always I had to switch up the recipe a bit. 
Layer in the crockpot:
3 sweet potatoes, sliced med-thin
1 sweet onion sliced
1 t curry powder
Pork Tenderloin
1 to 2 T Steen’s Pure Cane Syrup (molasses or maple syrup would work)
1 t curry powder/ salt to taste
4 small apples, sliced
1/2 c dried cranberries
2/3 c chicken broth
I started this after lunch and turned the pot on high for 4hrs. Normally I would do on low all day. It was great! VERY FALL!! Loved it!

Sherry Chicken {Crockpot}

Love, love, love my crockpot! It is a busy Moms lifesaver. I work late 2 days a week and the crockpot allows me the ability to make a great dinner in typically under 15mins first thing in the morning. Hubs comes home to a wonderful smelling house (always earns me some brownie points!) This morning I had frozen boneless/skinless chicken breast that I tossed in the crockpot with onion and carrots. It smells yummy!!

Boneless/skinless chicken breast

1/2 lg onion, thinly sliced

2 carrots, sliced

1 T  21 Seasoning Salute (Trader Joe’s spice mix)

1 cup water

1 can cream of mushroom soup

1/4 to 1/2 cup sherry

4 oz cream cheese

Place everything EXCEPT cream cheese in slow cooker, set on low and cook all day. About a hour prior to eating stir in cream cheese. Serve over egg noodles or rice.

Chicken Burritos {Crock-pot}

This is not your average chicken! It is so moist and yummy and so easy I am almost no, not really, embarrassed to share, it is THAT EASY!!

Boneless/skinless Chicken breast (I put mine in straight from the freezer)

P4040029 1 cup salsa (like Pace or your fav thicker style salsa)

1 cup brown sugar

THAT IS IT!! Set it on low and let it go! I have had several questions “Is it sweet?” No, not really at all it has a wonderful seasoned taste that is just delish!

Finish with your fav tortillas, sour cream, cheese, veggies, whatever you like. AND the leftover chicken makes an awesome Fiesta Chili or replace the ground turkey in Taco Bake!
