Asian Braised Beef

Ohh, this yummy Pinterest inspired dish caught my eye and I was excited to try something new! As always I was inspired by this recipe but changed it up to fit my family and what I had on hand. Here’s what I did.

Ingredients:

2lb cubed sirloin roast

2T flour

1t salt

1/2t pepper

3T veg oil

3 cloves minced garlic

1t fresh grated ginger

2in piece Lemongrass chopped fine

1 cup chicken broth

1/2 c low sodium soy sauce

1/4 c hoisin sauce

1/2 c rice wine vinegar

1/4 c brown sugar

1/2 t red pepper flakes

2t sriracha

3 green onions

What I did:

Add vegetable oil to dutch oven or instant pot on sauté setting. Add flour, s&p to a small bowl, toss cubes Beef in flour mixture. Sear Beef in veg oil to brown and crusty. This is an imp’t step and you shouldn’t skip! Flavor people, flavor!! Brown in small batches and set aside.

After that’s all nice add garlic, ginger, & lemongrass to pan sauté just until fragrant and add chicken broth. Scrape all the crusty stuff off the bottom of your pan. Again, flavor.

If you are doing this in your instant pot or crock pot/ slow cooker add the meat back to pot w broth & spices.

Mix soy sauce thru sriracha and pour over top then sprinkle with green onions.

If using slow cooker set to low for 6-8 hrs or high for 4. Or set the Instant Pot for 60mins allow pressure to release naturally and serve over Jasmine rice. I served peas on the side. Broccoli would be great too. Anything green!

Corned Beef {crockpot}

Another first as far as food goes,  I made Corned Beef (definitely not my favorite thing, thou I do love a good Reuben!) But, again I am trying dishes that Hubs  adores. SO here is a super simple recipe that I personally think can never cook long enough, I cooked it forever!  It’s up to you; I wanted it to fall apart. It turned out really well and will definitely cook it in March for St. Patty’s Day!! SO, here is what you need to do! Place the

Corned Beef, straight from the packet with seasoning & the fat side UP!

1 beer or more  ( I used a New Castle) you want to just cover the meat in liquid ( you can use water to make up the difference)

1/4 cup brown sugar

2 T whole grain mustard

4 sprigs fresh thyme

2 stalks celery, cut in chunks

3 carrots, cut in large chunks

1 onion, quartered

4-6 small red potatoes

I placed the meat on the bottom, added beer, spices, mustard then veggies. Cooked on low forever! Like 12 hours.

It’s CROCK POT THURSDAY, why you may ask Thursday is soccer practice and we have to leave home at 5 and don’t get home until almost 7. Therefore, the crock pot is my solution to a home cooked meal without

Here is another pintrest inspired dinner, I, of course added lots of veggies and cut the fat from the original recipe. SCORE!

3 chicken breast, cubed

1 packet of Good Season’s Italian dressing

1 can chicken broth

1 can cream of mushroom

4 oz low fat cream cheese

1 (15 oz) can fire roasted tomatoes

2 handfuls fresh spinach

place first 4 ingredients in the crock, set to low and go. When you get home stir in cream cheese, tomatoes & spinach. Serve over pasta or rice and ENJOY!!

Asian Chicken Lettuce Wraps {crock pot!}

Yes, you read that correctly! Asian Chicken in the crock pot! Lettuce Wraps are one of my favorite things and Cheesecake Factory serves them with these yummy fresh veggies and trio of sauces so today I am giving you the weeknight version! Still the fresh yummy veggies, just a really quick, no mess, no fuss chicken. You could always grill this chicken and really boost the flavor, but when short on prep time this worked great! If you blink you may miss the directions!!

Crock pot Asian Chicken

boneless/skinless chicken breast

1 cup SOY VAY Island Teriyaki*

dump in crock and set on high for 4 hrs or low 6-8 depending on the time you have* (I started mine at lunchtime so I did high, it worked perfect)

Shred chicken with 2 forks and set aside

*Island Teriyaki is now available at Wally and Food Lion (used to only be able to find it at Trader Joe’s!)

image I am obsessed with Peanut Sauce and this random combo I came up with yesterday was AWESOME! Not too much peanut butter, a little kick and some acidity for a little tang! I made this after I got the chicken going and put in fridge so all the flavors could come together.

Peanut Dipping Sauce

3 T Island Teriyaki

1 T peanut butter

1 T rice wine vinegar

2 t Sriracha

Wisk all ingredients together. ENJOY!

Asian Marinated Cucumbers:

English cucumber, sliced thin

1/4 cup Island Teriyaki

1 1/2 T rice wine vinegar

I also used:

Water Chestnuts, diced

Carrot, shredded

Avocado, sliced

Lettuce for wrapping all the goodies in!

Cooking with Ms.Kat {Apple Butter}

This months Cooking with Ms. Kat is an APPLE theme! It goes along great with last weeks fieldtrip to Apple Hill Orchard. And I thought it would be something fun! I tinkered with this recipe for several days and after several batches I found what I think is YUMMY!

Ms. Kat’s Crockpot Apple Butter:

this easily doubles, triples, etc….

1 dozen apples*

3/4 cup brown sugar

4 cloves

1 t cinnamon

1 lemon zest and juice

1/4 to 1/2 cup orange juice

apple chunks

Peel. Core. Blitz Apples in food processor. Put in crockpot. Add brown sugar, cinnamon, cloves, juices and zest. Stir well. Set crockpot on low for 10 hrs. Next, prop open lid to crock and set on low for additional 4 to 8 hrs depending on texture and type of apples.

*I used a mix of apples. I used Gala, Fuji, Granny Smith, Golden Delicious, play around and find what you like best!

BBQ {in the crockpot!!}

so, it is finally feeling like winter and has been raining all weekend, ugh! Hubs was craving bbq and I didn’t want him to catch pneumonia by going out to his smoker every 20mins! Pork Loin was on sale so I tossed it in the crockpot with salt, pepper, garlic, crushed red pepper, and poured apple cider vinegar about half way up the side of the pot. Set to low and let it go all day!!

Drain the majority of cooking liquid out of crock and either make a yummy bbq sauce with the liquid or pour your fav bottled sauce in crock, pull apart with fork and ENJOY!!

Potato Soup {crockpot}


Yummy! There is nothing better than walking in the door to a house with a warm, ready to eat dinner sitting on the counter! Hence. my love of the crockpot!! Today I made one of the easiest potato soups ever! Just dump, shake, stir, dump again, stir again, set on low and voila a few hours later a meal!


CHOP: 
1 onion
1 carrot
1 stalk of celery 
DUMP into crockpot 
1 can cream of chicken*
1 can cream of mushroom
2 cans chicken broth*
1 can of milk
SHAKE:
salt, pepper, garlic
Worcestershire sauce
hot sauce
all to taste
STIR
DUMP:
1 pkg frozen hash brown potatoes (cubes are my favm shredded works fine too)
STIR, again!

ENJOY!!!

Jen Cooks {Crockpot Wednesday}

Jen is at it again!! A yummy crockpot recipe that is easy and different!! I LOVE the idea of wrapping the chops in their own little package and I am always looking for a “new” way to prepare pork chops, this is a great idea. Would be lovely for a dinner party as well. Thanks Jen!!

4 pork chops

1 jar of apricot jam

salt & pepper

2 granny smith apples

1 cup brandy

Place each pork chop on a sheet of tinfoil; add salt, pepper, spoonful of jam, 4 slices of apples,  wrap package up leaving one end open, pour Brandy in. (Apx 1/4 to  1/3 cup) seal other end. place in crockpot and cook on low 8 hours.
