Perfect Peach Ice Cream

Peach Ice Cream
2 cups half and half
1 cup buttermilk

4 whole peaches, peeled and sliced
3/4 cups of sugar
4 mint leaves, chopped
2 t vanilla
2 T lemon juice
Toss peeled and sliced peaches with sugar and lemon juice, cover; refrigerate and let macerate at least for a couple of hours, preferably overnight or all day. Chop the peaches and mix with cream, buttermilk, mint and vanilla. Put in ice cream maker, turn on and ENJOY!!!!

I made a raspberry puree and drizzled over the top. And added a fresh mint leaf.

Snow, and lots of it!! {Snow Cream}

Believe it or not I have never made Snow Cream! Not so crazy since the old wives tales say that you must NEVER make it with the 1st snow and it typically doesn’t snow more than once, if even that here in NC! Well, we are into the throws of our 2nd BIG snow if the season and it is STILL SNOWING!! I have found several recipes including this one from My Blessed Life.

Snow Cream

  • a big pan of fresh, clean snow {you need a lot because it reduces down with the other ingredients}
  • 1 can sweetened condensed milk
  • 1 cup powdered sugar
  • 1 T. vanilla
  • 3/4 – 1 1/2 cups of milk {whatever looks right and makes it the right consistency – not too runny}

Add sweetened condensed milk to snow and mix well.  Add sugar, vanilla and milk and stir until well blended.  Serve immediately for “soft serve” snow cream or freeze for later.

Now I have never made it this way I have just added sweetened condensed milk and a dash of vanilla. I am going to have to try both!!

Aa is for Apple {Sour Cream Apple Pie}

apple-full This week at Life As Mom the theme of the Recipe Swap is APPLE!! I am so excited, Apple Hill Orchard is picking one of my favorites, The Honey-Crisp and in mid-October The Pink Lady and The Granny Smith! YUM-YUM!!! Another favorite Fall stop for apples is Carrigan Farms, this is the spot I went to as a little girl to pick strawberries, apples, pumpkins and at Christmas time they have the most beautiful Poinsettias. If your in NC I highly suggest you check these places out!!
On to the food!! This is by far my most favorite Apple Pie, it is tart and tangy, this is adapted from The Upper Crust.
Filling:
1 cup sour cream
1/2 c flour
1 egg
2 tsp vanilla
1/2 tsp salt
1 cup sugar
4 to 5 Granny Smith apples, peeled, cored & sliced
1 deep dish shell, pre-baked
Topping:
1 cup walnut or pecan pieces
1/4 cup flour
1/3 cup brown sugar
1/3 cup brown sugar
1 Tb cinnamon
1/3 cup butter pieces, chopped
Blend all ingredients for the filling except apples, until smooth. Add apples and pour in shell. Bake 45 mins at 400. Mix all ingredients for topping and sprinkle on the top and bake 15 mins more.
