Lemon Drop Cupcakes

These little jewels turned out amazing.I love lemon I add lemon to everything the crisp/tart freshness can cut even the most undrinkable of drinks! I love a little squeeze on mixed greens and it gives a little punch to blan veggies. Gives great taste with no calories or fat!! Ok, I know… What about the cupcakes?
I used my favorite vanilla cake recipe and added a little fresh lemon juice. After they cooled I took the center out with my new cupcake corer that worked like a champ!


And filled it with apx 1 T of my favorite short-cut ever!! Trader Joe’s Lemon Curd. This stuff is so good that I can not think of any reason why I would go to the trouble of making it again!!

Then the frosting on TOP!!
1 8 oz block of cream cheese, softened
1 stick of butter, softened
2 T lemon curd
zest of 1 lemon
1 t vanilla
4 cups powered sugar (give or take)
Mix cream cheese and butter until super light and fluffy, add vanilla, lemon curd and zest; mix well. Add powered sugar 1/2 cup at a time until you get that perfect consistency. You may need to add a splash of milk or lemon juice if you want more zing.
I topped these with  Lemon Head candies.

Cherry Cupcakes

Rosie’s PINKALICIOUS Cherry Cupcakes was a recipe that just screamed my name!! I am not typically a fan of artificial fruit flavoring but these cupcakes are just YUMMY!! I followed Rosie’s recipe and I got almost 3 dozen cupcakes.
For the frosting I decided that I would continue with my “testing” and make Cherry Chocolate Cream Cheese Frosting. Can you say DELISH? OMG I just love this frosting. I wanted just a hint, a back note of chocolate to bring out the cherry flavor.
Cherry Chocolate Cream Cheese Frosting
1 stick butter, softened
1 8oz block cream cheese, softened
1 tsp vanilla extract
4 T cherry juice
1 T good cocoa powder
3-4 cups confectioners sugar, added 1/2 cup at a time to desired consistency
Whip butter and cream cheese until light & fluffy add cherry juice, vanilla & cocoa powder; mix well. Slowly add sugar a little at a time until the perfect consistency appears!
This was a great recipe and I love how they work great for Valentine’s Day!! So cute!

The Cha-Cha {chocolate cake with Nutella buttercream}

Our Birthday “Fairy Cha-Cha” celebrated her 4th birthday today amidst the backlash of the “Blizzard of Jan 2011”. The kids were so excited to be out of the house that they were WILD!! We had to let them run around outside just the wear off some energy! The star of this cake was the Nutella buttercream. Delish!!
Nutella Buttercream
1 stick softened butter
1 cup Nutella
1 t vanilla
milk (splash or two)
4 cups (apx) powdered sugar (may need more or less depending on humidity)
Mix butter, nutella & vanilla together, slowly adding 1/2 cup of sugar at a time to desired consistency; may need to add a little milk to get a smooth frosting.

Maple Bacon Cupcakes

Thanks to Vanilla Garlic I am testing the much talked about Maple Bacon Cupcakes. I been who doesn’t love bacon? I do!
With all this snow I am bored out of my gourd and thought this is a perfect time to give it a try!!
I followed the recipe from Vanilla Garlic although I did add 1 tsp vanilla to the batter.
Frosting: {adapted from Vanilla Garlic’s recipe} I doubled the butter/sugar ratio and liked much better as I found it to be be way to sweet. Corse Sea Salt is also great on the top!
1 stick softened butter
2 T maple syrup
1 T milk
1 t vanilla
2 c powdered sugar
I also topped the cupcakes with crumbled bacon.
My humble opinion; the the cake is super light, fluffy, great texture, although I didn’t care for the bacon crunch in the cake. The frosting was great. I do caution ONLY make this with REAL Maple Syrup. For testing purposes I used The Fresh Market 100% real maple syrup. It was great. IF I make these again I may leave the bacon out of the batter? I don’t know, I wish I could get more opinions on the taste of these. But, we are snowed in.

Carrot Apple Cupcakes


I looked through tons of recipes and combined bits and pieces from several different recipes  and came up with an AMAZING cupcake!! I am making these for my favorite women in the World! My very dearest girlfriends in the whole world who I have had the pleasure of knowing for 22 years!!! WOW. We live in many different places and take the time as often as we can to reconnect and recharge and share in our joys. Tomorrow night we gather to celebrate a new career and a new baby! Congrats to Mer and Rae!! I am so happy for you both!!!

Carrot Apple Cupcakes

3 cups flour

2 cups sugar

2 tsp baking powder

2 tsp baking soda

1 tsp cinnamon

2 tsp unsweetened cocoa powder

1 cup vegetable oil

4 large eggs

1 cup milk with 2 tsp lemon juice (let sit 10 mins)

2 cups grated carrots

2 cups grated granny smith apples

1 T grated orange zest

Bake at 350 for 17-20mins. Cool and Frost.


8 oz fresh mild goat cheese (high quality)

8 oz cream cheese, softened

1/2 stick butter, softened

2 T fresh orange juice

1 T orange zest

4 cups powdered sugar

Strawberry Cake & Cupcakes


I was asked to make a cake for a dear family friend who is turning 65! I thought since strawberries are so abundant this would be a great time to whip up a new creation! I started with a very simple vanilla batter and then folded in the macerated strawberries and egg whites. Then I made a strawberry lemon curd to put between the two layers and finished it off with a strawberry cream cheese frosting! um, um GOOD!!!

Strawberry Cake

2 3/4 cup flour

2 cups sugar

2 tsp baking powder

2 sticks butter

3/4 cup milk

1 tsp vanilla

2 eggs

3 egg whites


1/3 cup macerated strawberries, (pic above, blitz in food processor, add 1 Tb lemon juice and allow to sit 5-10 mins)

Place flour, sugar & baking powder in mixer, blend on low to mix. Add 2 sticks butter (1 Tb at a time). Add vanilla to milk and add a some milk then an egg & rotate. Fold in berries and egg whites, one at a time. Place in 2 9in cake pans or lined cupcake pan and bake cakes apx 25 mins and cupcakes 18 min at 350. Cool completely prior to frosting.


Strawberry Lemon Curd Filling


2 cups whole frozen strawberries (I froze fresh ones)

6  Tb  sugar, divided

1/4  cup  fresh lemon juice

1/4  cup  all-purpose flour

Bring strawberries, 4 Tb sugar, and lemon juice to a boil in saucepan, and cook 5 minutes.Whisk together remaining 2Tb sugar and flour in a saucepan. Whisk in strawberry mixture; cook over medium heat 5 minutes or until thickened and bubbling around edges. Pour into a glass bowl, cover surface with plastic wrap; chill at least 2 hours.


*Cooks Tip: When adding filling, put a ring of the frosting around the outer edge of cake and then put filling in the center so it will not ooze out the side and mess up your frosting!

Strawberry Cream Cheese Frosting

1 8oz block cream cheese

1/2  stick butter, softened

1 cup fresh strawberries, blitzed in food processor

2 tsp vanilla

4- 6 cups powered sugar

Mix cream cheese, butter & vanilla and 1/2 strawberry mixture, slowly add powdered sugar (1/2 cup at a time) add more strawberries as needed to provide the right texture for frosting.


I had a little batter left over so I made the boys some cupcakes and made them a mini version!

Rock Star 1st Birthday!

How much fun did I have doing the “Rock Star” themed birthday party this weekend? TONS!!!
I did a big guitar cake for all the guests at G-man’s Party and this adorable smash cake for the Birthday Boy!  His cake was a banana pound cake with chocolate frosting and the guitar was a choco-chocolate cake with peanut butter frosting. OMG it is MY new fav! De-fricking lish!!

Best EVER Peanut Butter Frosting

1 stick of butter
1 8 oz cream cheese
1 cup peanut butter
1 t vanilla extract
1 32 oz bag powdered sugar
Cream all ingredients, but sugar. Slowly add powdered sugar in 1/2 cup increments.  Sometimes you will use the whole bag, sometimes more, sometimes less. I think it has to do with the humidity. Which here in NC we already have had 90 degree sticky days and I am finding I am using more sugar in all my frosting recipes. Who knows?
For G’s cake I used red fondant stars and threaded craft wire between 2 stars and sealed with a little vodka! I know you must have just gasped! It was literally less than a drop! I read somewhere that we working with fondant using alcohol opposed to water would seal quicker as the alcohol evaporates and the water just makes a sticky mess. It worked! I made them around midnight last night and the were perfect this morning!! And didn’t they turn out cute! I am posting another pic cause I just love it!!

Ms. T’s Orange Cream Cake

Happy Birthday Ms. T!!
Ms. T is Jack’s pre-school teacher and when I heard that the teachers were planning her a birthday party I had to volunteer to bake the cake! I was so excited to try out some of the techniques I learned in my Cake Decorating Class! When I started, I was thinking I was going to make a lemon cake but, then when I saw the beautiful Clementines in my fridge I thought ORANGE! 
3 c flour
2 tsp baking powder
1/2 tsp baking soda
2 1/2 c sugar
1 c butter, softened
5 eggs
2 tsp vanilla
1/4 c orange juice
3/4 c milk
zest from 1 clementine*
In stand mixer add all dry ingredients and blend for a few mins to lighten up. Add softened butter and mix 2 mins.  Add vanilla to milk & juice and add a little liquid then egg and rotate ending with milk mixture.
Put in greased & floured cake pans. Bake 350 for 35-45mins
1 8 oz cream cheese, softened
1/2 stick butter, softened
1 tsp vanilla
1 T orange juice
zest from 1 clementine *
4 to 6 c powdered sugar
Cream all ingredients except sugar with mixer and slowly add sugar 1/2 c at a time.
*Clementine may be substituted for orange, nectarine what ever you have on hand.

Ben’s Batman Birthday!


Happy, Happy  BELATED Birthday to Ben!           Ben’s Mommy is a great friend of mine and due to the amazing amounts of SNOW we have had we are FINALLY getting to CELEBRATE Ben’s 4th Birthday!! He is really into Batman right now so I had a great time making these. We made Ben his own cake and all his friends get cupcakes!  I used fondant to make all the bats, his name & the 4!  I am still a novice with the fondant but, I am getting better!

Star Wars Birthday

Happy 7th Birthday! To my man CJ!

CJ LOVES Star Wars and I was so excited to make cupcakes for his party at school and a cake the party at home with his buddies! I thought for my 1st time working with fondant I was pretty successful! I was super intimidated by that stuff.  But, I didn’t let it beat me! What do you guys think? Am I ready for Cake Wars? ha! Maybe I could go work for Duff!!
