Sunny Paris Salad

Since the cucumbers are coming in like crazy I decided to make a fresh salad and wanted to do something different, I came across this yummy looking salad. Of course I didn’t have feta cheese on hand so I made a few revisions to fit what I had and I think it worked beautifully.

Cucumber and Goat Cheese Salad

I wrote a post earlier this summer about an amazing farmer in Lenoir, NC who makes the most amazing goat cheese I have ever had. She has 1 in particular called Sunny Paris, the name alone peeked my interest. I do not know exactly what she puts in the crack laced cheese log, but it for sure has shallots, lemon zest, dill, mint, can you taste it?

Fresh & Sunny and PERFECTLY YUMMY!!

Sunny Paris Cucumber Salad

6 cucumbers (I used 3 varities), chopped & deseeded

8 oz of Sunny Paris goat cheese (can use plain with fresh spices added to it)

1/4 c good olive oil

2 T fresh lemon juice

1 T water

black pepper

1 small sweet onion, diced fine

Peel, de-seed and chop cucumbers. Place in strainer, sprinkle with salt and allow to drain for apx 30 mins. Mix cheese, olive oil, lemon juice, water and spices in a bowl; add cucumbers & onions. Chill. ENJOY!!

Carrot Apple Cupcakes

I looked through tons of recipes and combined bits and pieces from several different recipes  and came up with an AMAZING cupcake!! I am making these for my favorite women in the World! My very dearest girlfriends in the whole world who I have had the pleasure of knowing for 22 years!!! WOW. We live in many different places and take the time as often as we can to reconnect and recharge and share in our joys. Tomorrow night we gather to celebrate a new career and a new baby! Congrats to Mer and Rae!! I am so happy for you both!!!

Carrot Apple Cupcakes

3 cups flour

2 cups sugar

2 tsp baking powder

2 tsp baking soda

1 tsp cinnamon

2 tsp unsweetened cocoa powder

1 cup vegetable oil

4 large eggs

1 cup milk with 2 tsp lemon juice (let sit 10 mins)

2 cups grated carrots

2 cups grated granny smith apples

1 T grated orange zest

Bake at 350 for 17-20mins. Cool and Frost.

 Frosting

8 oz fresh mild goat cheese (high quality)

8 oz cream cheese, softened

1/2 stick butter, softened

2 T fresh orange juice

1 T orange zest

4 cups powdered sugar

Hydroponic Lettuce,Goat Cheese and Blueberry Salad

Fresh and oh so tasty. First, I have to give a shout out to a few amazing LOCAL peeps who are Amazing!! First Mr. Jerry, no this is not his real name, however he does look a lot like Jerry Garcia! He grows the most beautiful Salad Greens I have ever seen. They taste so good. He comes on Saturdays to our local Farmer’s Market and sells my fav, a combo of red & green leaf, Bibb & romaine for $5. I am so in love with the fact that Jerry shares his lettuce here. He sells to Whole Foods and tons of restaurants in the area. He is a grow master!! Here’s a pic of the hydroponic lettuce.

P1010140 Another FAV of mine is Ripshin Farms who has the most incredibly mild and tasty goat cheese I have ever put in my mouth. She is only there on Wednesdays so I must hit the market twice a week to get both of my OBSESSIONS!!

P1010142In their honor, I made a yum salad with the green leaf lettuce, blueberries (NC grown), goat cheese, red onion and Champagne vinaigrette. DELISH!!

Not your Mama’s Breakfast Casserole

This is my first time participating in Ultimate Recipe Swap and I am so excited. First off, I am stoked that she picks a theme for each swap. Second, I LOVE this recipe and am so excited to be sharing it hopefully with new friends!! This is a breakfast/brunch casserole that I had at a “Going Away Breakfast” after a friends wedding. I of course have had to guess what it was and this is a very good “copy” of her original dish.

Goat Cheese, Artichoke & Ham Breakfast Casserole
2 cups milk
1/4 c evoo
1 loaf sour dough bread, cubed (I use Peppridge Farms)
1 1/2 c cream
5 eggs
salt, pepper & garlic to taste
1/2 tsp nutmeg
1 (12oz) pkg goat cheese, crumbled
1 tsp thyme
1/2 lb cooked ham, diced
3 (6oz) jars marinated artichokes, chopped
1 c swiss cheese, shredded
Whisk milk & oil in lg bowl. Add bread, let stand until liquid is absorbed apx 10 min. Whisk cream- nutmeg add goat cheese in sm bowl mix remaining spices; in a 13 x 9 greased casserole, place 1/2 bread mix, top with ham, artichokes, herb mix & cheese. Pour 1/2 cream on top and repeat. Bake uncovered at 350 for 60-90 mins until casserole is firm.
