Bunko Dinner Party {Greek Theme}

May is my month to host Bunko! I wanted to do it once it was warm (hopefully not TOO warm!) so that we could sit out by the pool! I have been thinking about what I wanted to do. With my new healthier lifestyle I wanted to still make a YUMMY  dinner but have it be easy on the waistline! My plan started with

Al’s Famous Greek Dip  w/Pita Chips

Chicken Souvlaki

Chicken breasts, pounded thin and cut into 1 in strips
2 cloves fresh minced garlic 
1 t fresh oregano 
2 t fresh flat leaf parsley
juice from 1 lemon
1/4 c olive oil
Salt & Pepper, to taste
Marinate overnight. Place on skewers and grill.

Roasted Vegetables

I toss the veggies with the same marinade I use for the chicken.
Zucchini
Squash
Onions
Tomatoes
cut, marinate and wrap in foil with 2 ice cubes and toss on grill for apx 30 mins (crisp/tender)

Greek Salad

Dressing:
6 T olive oil 
6 T lemon juice 
2 tsp Dijon mustard
1 clove garlic, crushed
fresh oregano
Salt & pepper

Salad:
 
2 heads Boston or mixed lettuce, torn into bite-sized pieces 
4 small cucumbers, sliced
1 small red onion, thinly sliced
1 pint cherry tomatoes, cut in 1/2
1 cup pitted ripe olives 
4 oz feta cheese, crumbled

Whisk together dressing ingredients & add salt & pepper to taste. Set dressing aside. Toss lettuce & remaining ingredients in a large bowl. Add dressing just before serving.

Tzatziki Sauce

Whatcha Got Cooking Wednesday? Greek Shrimp Scampi Recipe Link-up

Shrimp is one of our favorites! It is so easy to prepare and as I have been craving a particular Shrimp Pasta dish that is a little time consuming and really high in calories. SO, I thought I would introduce you to it’s younger & skinnier version!! This is a super quick and easy dish that would be perfect for the inaugural WGCW! It works wonderfully for a quick dinner or is elegant enough to do for a dinner party. It doubles great. I hope you all enjoy!!

1 tsp olive oil
2 Tb minced garlic
1/4 cup fresh parsley
1 small sweet onion, diced
28oz can whole tomatoes, chopped
1 cup white wine
1 cup salsa
1 lb shrimp, peeled and deveined
4 oz crumbled feta
1/2 cup black olives
fresh lemon juice from 1/2 lemon
pepper & salt to taste
1 small box angel hair pasta, cooked al’dente you can use whole wheat pasta or a combo of the two

Heat oil in skillet, sauté onion and garlic until onion softens then add juice from tomatoes, and wine bring to boil;

add tomatoes, salsa and half the parsley; reduce heat, simmer apx 10 mins, add shrimp cook until just cooked through 3-5 mins.

Pour into pan (or if using oven safe skillet) top with cheese & black olives. Bake at 425 for 10-12 mins until cheese begins to bubble.

Sprinkle with remaining parsley, pepper & lemon juice.
Serve over pasta with a big salad and crusty bread as the sauce is SO good for dipping!!!

Al’s {soon to be} Famous Greek Dip

A dear friend, Al who resides in Charleston (now) with her adorable family makes this yummy and oh so easy greek dip for all of our Girl’s Get Togethers. Al’s {soon to be famous} Greek Dip is the perfect addition to any party buffet, a great weekend snack, or just a fun app for most any occasion! It is healthy but has alot more glitz than a boring veggie plate.

10 oz Sabra Hummus (I love the Roasted Red Pepper)

1 large cucumber, peeled & diced

1-2 tomatoes, diced

4 oz feta cheese, crumbled

Tzatziki sauce (recipe follows)

Layer ingredients starting with hummus and finally topping with the tatziki. Serve with pita chips and fresh veggies. Doubles wonderfully. You can make ahead. DELISH!!

Tzatziki (Greek Yogurt and Cucumber Sauce)

8 oz plain Greek yougart (strained for an hour or 2 to remove excess moisture)

1 large cucumber, peeled, seeded & excess moisture removed

1 t fresh dill

1 T fresh lemon juice

salt & pepper to taste

Toss everything in the food processor and blitz for a minute. Chill in fridge. ENJOY!!
