Pumpkin Chili {Souper Sunday}

For this edition of Souper Sunday it is Halloween week

and it’s all about the PUMPKIN!!

I am so excited to re-share my friend Michelle’s Pumpkin Chili Recipe. It may inspire you to whip up something fun for Halloween!! It is and odd combo, I know, but really yummy & even the pickiest of eaters will have no idea about the pumpkin!! Give it a try!!

Pumpkin Chili

1 T. canola oil

1 onion, diced

1 clove garlic, minced

1  lb. lean ground beef or turkey (I used turkey)

1  can cannellini beans, drained & rinsed

1 can black beans, drained & rinsed

28 oz. chopped tomatoes, with the juice

1 can  pumpkin (NOT pumpkin pie filling!!)

7 oz. chopped green chilies

1 can chicken broth

1 T. cumin

1 T. chili powder

1 t. sugar

1 t. salt

1/2 t. cinnamon

1 t. unsweetened cocoa

Sauté garlic and onion in oil. Add meat and brown. Add remaining ingredients, cover; simmer for approx. an hour- stirring occasionally. This also works great in the crock pot. Enjoy!!

Trick or Treat {ideas}

WOW Halloween is almost here! I can not believe it! And to beat all they are calling for snow showers on Saturday! I thought I would share a few of my Halloween treats from the past as the past few weeks have just been insane! Hubs has been in New Mexico for work and every time I pick up the phone I seem to get bad news. Enough, of my pity party! LETS TALK PUMPKIN!!!

{ghostly} Sheppard’s Pie {Jen Cooks}

P1010489  My good friend Jen is back sharing another one of her family favs. I did not have the success that she did with my ghost. However, the Holiday Spirit is there and the dish was a hit with the boys.

1 lb ground beef (I use turkey)

1 onion, chopped

1 (12oz) bag frozen veggies

2 cups diced tomatoes

1 jar beef gravy

1 3/4 c chicken or beef broth

2 T butter

1/4 t garlic powder

1/2 c milk

2 1/4 c mashed potatoes

1/4 c parmesan cheese

1 egg, lightly beaten

Preheat oven to 375. Brown meat & onion, set aside 12 peas, add remaining veggies, tomatoes, gravy to beef mix. Bring to boil, reduce heat to low and simmer 8-10 mins. Add egg to potatoes, mix well. Put beef mix in a casserole dish, mound potatoes in 6 “ghost” shapes. Use peas as eyes. Bake 20-25 mins.

Mantel {FALL} Makeover

IMG_4589 Even though FALL is NOT in the air this week (82 today). I decided it was time to do a Mantel Makeover to celebrate my FAV season. This makeover only cost me $6. for the Halloween banner, everything else, I already had!! My fav part of the whole mantel is the Candy Pumpkin Tree that Jack and I made this afternoon, with left over candy, pumpkin candy corn that he had to have! (and didn’t like, did I mention during the melt down in Wally he had “needing” the afore mentioned candy corn, I told him he wouldn’t like it!!) Branches we collected in the yard and some festive ribbon I had on hand.  Cute, don’t ya think?

IMG_4591 Hubs suggested I make an apple necklace for the deer. I may just take that challenge. Any suggestions?

Cowboy Treats!

Happy Halloween!! This is outfit #1. As at 2 yrs 3 mos Little j has developed an opinion. And, it is a strong one, not unlike that of both his parents. Anyhoo, this adorable yet, somewhat large outfit was shared with us and he loved it! This is what he wore to his party at pre-school. Isn’t it cute? Here is the finished product on the monogrammed Moon Pies!! I went with sprinkles. The great stickers came from my fav ebay store Tiny Prints Wall Art & More.

Here is j’s Halloween Treat Basket!! I love this it is a plastic pail that has been painted~LOVE!! I wanted to find something that he could use for years. I think this works. I got it while on my Girl’s Weekend to Myrtle Beach at Anything Joe’s a favorite store for all things personalized & monogrammed!!Trick or Treat! The trick is on all the Mommies & Daddies here in NC~ there is a monsoon hitting us! Are you kidding? Rain! It has rained almost every weekend this fall and I am NOT liking it at all. Luckily for us j doesn’t even get the door to door candy beg that is the ritual of this holiday. He just thinks we suddenly have a dozen kids in our neighborhood! The weather actually broke for about a hour and a half the rain stopped and after buying $40 worth of candy we only got 10 treaters and of the 10 NONE of the children even said “trick or treat” they just rang the bell and held open their bags! There was 1 bunch of 3 boys probably around age 7, when they walked up and saw j they screamed “Mommy, the cowboy has a gun!!! (If you have hand gun issues PLEASE do not bring them to me. I am just telling a story.) The last set of girls came and j said “hey neighbors” the older of the 2 girls, again probably 7 or 8 said “hey, i think we invited you to our party tonight, she then precedes to say oh yea never mind, he’s too young and you’re too old” THANKS!!!!!!

Pumpkin Butterscotch Muffins

I saw a friends FB update last week that said “the sweet smell of pumpkin & butterscotch” was coming from her kitchen! I had to know what it was so I hit Google and searched the 2 key words; and I found a ton of stuff. I found this recipe over and over so I guess I can’t really give any one person credit. I just can’t take the credit because I unfortunately did not think this one up! I made them in 2 pans 1 mini 1 reg. I sent the mini pan to pre-school with j and I personally think the minis were better. Not sure why maybe just because I love that little bite you get from a mini!

Pumpkin Butterscotch Mini Muffins
1 3/4 cups all-purpose flour
1/2 cup brown sugar
1/2 cup white sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1/2 cup melted butter
1 cup canned pumpkin
1 (6 oz) package butterscotch chips
Preheat oven to 350 degrees F (175 degrees C). Grease muffin pan with cooking spray or line with cupcake liners. Sift together the flour, brown sugar, white sugar, cinnamon, ginger, nutmeg, baking soda, baking powder, and salt into a large bowl. Whisk together the eggs, butter, and pumpkin in a separate bowl. Mix the flour mixture with the egg mixture. DO NOT OVER MIX !!! Stir in the butterscotch chips; divide into each cup of the muffin pan to about 3/4 full.Bake in preheated oven until a toothpick inserted into the center of a muffin comes out clean, around 10-12 mins.

Monogramed Moon Pies

I saw an article in Southern Living, one of my fav mags that was showing different treat ideas for Halloween and I just LOVED the decorated Moon Pies! Being the monogram fan I am I thought to put each child’s initial on their Moon Pie would be a cute sersee to send to preschool. I hope the kids like, j didn’t care for the pie at all! oops! Did you notice the adorable spider sticker? My fav ebayer seller, Little Prints, made these. I can’t wait to get the Christmas ones!!
