Wonderpot: A perfect Meatless Monday


Oh wow!

Can you say WONDERPOT?

Perfect for a Meatless Monday

and NO ONE will miss the meat, I promise!!

This is just insane for so many reasons!

It’s super quick to make, minimal ingredients, can be switched up easily and tastes delish!!

32 oz chicken broth
1 lb spaghetti. linguini or bucatini (my fav) noodles, avoid thin spaghetti or angel hair as they will cook too fast and get mushy!
28 oz can diced tomatoes with basil & oregano
2 T olive oil
1 sweet onion, sliced thin
3 cloves garlic, finely chopped
1/2 c sliced mushrooms
1/2 bag fresh spinach (mine was bad, will use next time)
several shakes of red pepper flakes


Put it all in the pot, making sure everything is submerged in liquid, if not add a little more broth or water.
Bring to a boil, cut down to medium and simmer for apx 15 mins with lid on,
stir every few mins.
It makes its on sauce, which thickens and gains flavor as it sits!!
Allow the pasta to “rest” for apx 5-10 mins prior to serving.
This is truly a find!!
I topped mine with crumbled feta, fresh thyme & chopped black olives.
It was awesome!!
and gave it a Greek feel which my family loves.
Feel free to top with your fav toppings.

Incredible tortellini soup


This soup is so freaking yummy, my family gobbles it up and I have taken it to several friends who also loved it!  So easy! You can have this made in less than 30 mins. Score!

This past Monday I made it again without the sausage for our new Meatless Monday and it was DELISH with or without the meat!!

3 Italian Sausages, casing removed, brown and drain

1 28 oz basil & garlic diced tomatoes

1 32 oz low sodium chicken broth

4 oz cream cheese

1 package fresh or frozen tortellini

1 bag of  fresh baby spinach

parmesan cheese, for topping

Brown sausage, drain, add tomatoes and broth. Bring to simmer, add tortellini simmer for apx 10 mins, stir in cream cheese. Once it is thoroughly incorporated and soup is a creamy orange shade add bag of fresh spinach.  Serve topped with fresh grated parmesan. ENJOY!

Souper Sunday {Italian Chicken Noodle}

Today I give you my take on Italian Chicken Soup, as comforting as the original just with a few more flavors.  Basically I used what I had on hand and this is what I came up with! It was really yummy and I enjoyed it a lot. I will definitely be making this again! I also made a huge pot so that this can be either frozen for a meal later in the month or eaten on all week long!

olive oil

onion, diced

2 carrots, diced

2 stalks celery, diced

1 t thyme

64 oz chicken broth

2 chicken breast, shredded

28 oz can whole tomatoes,drained and diced

1 can cannellini beans, drained & rinsed

1/2 to 1 cup small pasta, under cooked

Dice onions, celery and carrots, sauté in olive oil until tender; add thyme. Add chicken broth and allow to warm, flavors with combine. Add shredded chicken, tomatoes and beans. Simmer on low for 15-20 mins  add pasta just before serving. Top with shredded parm, ENJOY!!

million dollar spaghetti

Tonight I made Million Dollar Spaghetti that I found on Pintrest. I am going to try one Pintrest recipe a week, I will share the recipe. my pics and review of said recipe. This one rates high for the easy factor, fair on the fact that it dirties a ton of dishes, high on the fact that you could easily take this somewhere. It makes quite a lot. High on flavor, this is one of those old school recipes, it certainly isn’t healthy in fact I don’t really want to know how many calories a serving has but, it is really yummy!! Glad I pinned this one!!


Here is the original Million Dollar Spaghetti recipe and here is what I did:


1 lb linguine pasta, undercooked by apx 2 mins

1 lb ground turkey,browned, drained & rinsed

1 jar of your favorite pasta sauce

8 oz cream cheese

8 oz cottage cheese

4 oz sour cream

1 t Italian seasoning

1/2 stick butter (she used entire stick, gasp!)

1 cup shredded cheddar cheese

Cook pasta; brown meat, drain & rinse. Add pasta sauce to meat and simmer on low while preparing remaining ingredients. Mix cottage cheese, cream cheese & sour cream together add Italian seasoning. Place a few pats of butter on bottom of casserole dish. Add 1/2 pasta, spread cheese mixture, add remaining pasta, meat sauce; place in 350 degree oven for 30 mins. Remove and top with cheese cook apx 15 mins longer. ENJOY


Lackey’s Ragu

Thanks to a family friend, Kipper Lackey for sharing this recipe with me years ago. I am re-posting since now I have a pic and it is so worth sharing again! ENJOY

I have shared this with many of my friends, all who have raved. It’s sort of a soup, a stew & a pasta. It is just yummy! Perfect for a cool fall day!

Lackey’s Ragu:

2 Tb olive oil

1 lg onion, diced

4 cloves garlic, minced

1 lb ground turkey

3-4 Italian sausage, casings removed (I use 2 hot, 2 sweet)

2~ 14 1/2 oz cans tomatoes in juice with Italian spices

2~ 14 oz cans chicken broth

1 can Cannellini/white beans, drained

2 t oregano

2 t basil

1/4 t crushed red pepper

1/2 c small elbow macaroni

1~ 6 oz bag FRESH baby spinach

1/3 c grated Romano cheese

Heat oil, add onions & garlic. Saute 6 mins add ground turkey & sausage crumbles. Brown. (Put in warm crockpot and) Add tomatoes w/ juice, broth, spices, (I waited to add beans until 2 hrs prior to eating) beans and simmer at least 20 min. Add pasta cook 12-14 mins. (if using crockpot pasta may need a little longer) Add spinach & cook apx 3 mins (just before serving) Season with salt & pepper and serve with fresh grated cheese. (again, if using slow cooker… cook on low all day and add spinach apx 10mins before serving.) Yummy!!

This is not only the BEST tasting it is the EASIST way to make this yummy pasta dish!! It tastes as if you made the whole thing from scratch! Your family will LOVE it!

2 jars of your fav pasta sauce
1 c half & half
1 c chix broth
1 Tb red wine vinegar
2 Tb olive oil
1 onion, finely chopped
2 carrots, finely chopped
1 stalk celery, chopped
1 lb ground turkey (or beef)
2 tsp Italian seasonings
salt, pepper & garlic to taste

Add olive oil to pan & saute onions, celery, & carrots until tender, add to sauce/1/2 & 1/2/broth/vinegar mix. Brown meat, add to mix. Add spices. Simmer on low for 20mins or as long as you like.


Pesto Chicken

If you have been following you know how much I LOVE Pesto and I am always for looking for new ways to include it in my weekly menu. Check out my Perfect Pesto, I consider it perfect because it is so good but, not too strong which is the only complaint I have ever heard about pesto, some people like Tina will complain that it is too strong so the addition of the fresh spinach doesn’t change the taste, it mellows it a bit! YUM

Pesto Chicken

Boneless skinless chicken breast

garlic salt & pepper

1/2 cup Perfect Pesto

mozzarella cheese for topping

Pound chicken thin, top with pesto, cover with foil, bake 30-40 mins at 350, remove foil, top with cheese pop back in oven for 7-10 mins to melt cheese.

Perfect Pesto


Mama loves some PESTO and I love making it and lots of it!! I have several basil plants just so I can make Pesto all summer long to stock pile it for the winter! I have had a few friends say that sometimes they think that Pesto can be a little strong so I add fresh spinach to my recipe in order to mellow the flavor a bit. Don’t worry it doesn’t change the flavor! I also use walnuts in lew of pine nuts as Hubs gets massive headaches from pine nuts and the walnuts don’t seem to bother him as much.


Perfect Pesto

2 cups basil leaves

1 cup fresh baby spinach

3 cloves garlic

1/3 cup walnuts

1/2 cup olive oil

1/2 cup parmesan cheese*

In food processor add basil, spinach and garlic, pulse until combined; add walnuts and parm while pulsing slowly add olive oil through the tube. It’s that easy!!


* NOW if you are making a ton and want to FREEZE it DO NOT add PARMESAN. Place in freezer safe dish and lightly top with a layer of olive oil and it will freeze beautifully. Take out of freezer and add shredded parm to Pesto and ENJOY Pesto all year long!!

Drunken Turkey Vegetable Lasagna

It is finally feeling a little like fall and pouring rain. I haven’t made lasagna in ages and thought today was the perfect weather for it. I had some veggies that needed to be used and thought that mixing them with some ground turkey would be great.

2 jars of your fav prepared pasta sauce

1 lb ground turkey

1 onion, chopped

2 carrots, chopped

1 yellow squash, diced

salt & pepper to taste

garlic, basil & oregano to taste

1/4 to 1/2 cup red wine

1/4 cup half & half

Brown turkey and add to pasta sauce, sauté onions, carrots & squash in olive oil; add to pasta sauce. Add red wine and 1/2 & 1/2.  Allow to simmer for 20-30 mins to allow flavors to incorporate. Meanwhile prepare cream cheese mixture.

1 1/2 cup chicken broth

1/2 cup white wine

1 8 oz block cream cheese

salt, pepper & garlic to taste

Bring broth & wine to boil and reduce to medium; stir in cream cheese, allow to melt.

1 box (10 oz) frozen spinach, thawed, drained and all water removed

4 oz feta cheese

1 small bag of shredded Italian cheese

1 box lasagna noodles

Start by making pasta sauce mix, cheese mix, and thawing spinach. Layer lasagna with sauce, noodles, cheese mix, spinach, feta, repeat once. Then do 1 more layer of sauce, noodles and end with shredded cheese. Cover with foil. Bake at 350 for 1 1/2 hours. Allow to set and cool for 15 mins or more prior to cutting. Enjoy!

Pizza Night!


Almost every Friday we eat pizza (healthy, I know). Sometimes we order from our favorite, Frankie’s Pizza, sometimes we pick up a Wally World Special, and sometimes…. I make a homemade pizza! Tonight, I made an amazing pizza with roasted tomatoes, caramelized onions, buffalo mozzarella, and parmesan. It looked beautiful and tasted even better!!

1 thin pizza crust (Wallie World has a great all-natural crust in the deli for $2.50!)

1 cup marinara sauce or pizza sauce

1/2 roasted Vidalia onion

2 handfuls roasted cherry & grape tomatoes

slices of fresh mozzarella cheese

parmesan cheese

I spread my fav Trader Joe’s Marinara Sauce on the top and then just layered all my items. Then sprinkled a little extra virgin olive oil on top. Baked at 450 for 10mins. DELISH!!
