What’s Baking? Eggless Chocolate Cake

Baby Bray is turning 1 and he is allergic to all sorts of food especially eggs. So, I looked at a ton of different recipes to come up with what I hope to be a DELISH Chocolate Cake without eggs, butter or milk.

1 1/2 c flour
3/4 c sugar
1/2 c cocoa powder
3/4 tsp baking  soda
1/2 tsp salt
1/2 c vegetable oil
1 c warm water
2 tsp of white vinegar
1 T vanilla

Mix everything together and bake at 350. I had an odd shaped dish and so it took apx 50 mins to cook. I then made Chocolate Frosting  that you find on the back of the cocoa powder box. As he can’t have the milk chocolate chips I would normally use.

Monkey Birthday Party

These are the cupcakes I made for j’s friends! I just LOVE cupcakes!!
I used mini vanilla wafers for the muzzle, cherrios for the ears and m&m’s for the eyes. I made my favorite Banana Pound Cake & Chocolate icing. They were a huge hit!

Here is the cake I made for him! This time I used icing for all the features.

1st Birthday Party

These are the adorable, if I do say so myself, Monkey Cupcakes I made for Little J’s 1st Birthday! I also made a cake just for the birthday boy! I found an amazing cookbook The Whimsical Bakehouse.http://www.whimsicalbakehouse.com/ They have great ideas. I made a Banana Pound Cake with chocolate frosting. Here goes:
1 box Pound Cake Mix
2 eggs
1/3 c milk
1 banana, mashed
For the chocolate frosting I melt about 1/2 bag of chocolate chips with a bit of whipping cream and vanilla extract then slowly add powered sugar until I get it just right. Depending on the day it is a little different every time!
