I am striving to get back at it! Back to Menu Planning that is! I have been so slack this summer about our schedule and everything else!! oops. I have taken a new job as a preschool teacher and I am so excited!! However, I am going to be busier than ever and really need to get organized.

Today I went to HT as well as my love Trader Joe’s and have, hopefully enough to get us thru this 1st week. As it is going to be a CRAZY one!!!

Monday~ Crockpot Chicken Masala & Basmati Rice  NEW recipe!!

Tuesday~ Veggie Lasagna NEW!

Wednesday~ Bambino Pizzas for boys from TJ’s (mommy @ Parent’s Night)

Thursday~ Leftover Buffet (mommy filming segment for Clt Today!!)

Friday~ Pizza or Mexican Dinner OUT!!

I am still on my diet and will be out of the house 3 nights this week so I am planning EASY meals that if need be Hubs can (possibly) prepare.

Monday~ Jambalaya

You will know that the recipe is HEALTHY, FLAVOR~FULL and UNDER 400 calories per serving! The weight loss plan that I am doing adds back dinner after Week 6 and it must be under 550 calories. I thought that it would be easier for me if I got a head start on planning recipes that would fit in this calorie range. I also wanted to try and keep the main component of the meal to be under 400 calories so that I could have a little room to play if I wanted to add a veggie or fresh salad greens.

Weekly Menu

Routine… Must get back into it! Uck, Jack & I have been home for almost all of the Christmas Break and I am so out of our routine that it might be hard to get going on Tuesday we he will head back to pre-school and I to work. I have a great week of meals planned and my soup is already on the stove making the house smell so yummy. It is 15 outside and I think Soup is just what we need! I will link recipes as I make them!

Souper Sunday~ Tomato/Corn Chowder
Tuesday~ Brunswick Stew
Wednesday~ Paprika Beef {Crockpot}
Thursday~ Spaghetti & Meatballs
Friday~ Pizza Night! NO COOKING!!

Uck! I am so sad the weekend is almost over and I have to start thinking about the week. So, I just checked out my backup stash in the freezer and am coming up with a game plan for the week.

Mon~ Roasted Chix with Balsamic Tomatoes
Tues~ Lackey’s Ragu~ AMAZING!!
Wed~ Dinner @ Church~ No Cooking!!
Thurs~ BUNCO!!! Mommy’s Night Out!! Leftovers for the Boys!

Is it really Monday again???

Fall is flying by! I mean dang Turkey Day is just around the corner! This week is going to be a very busy week for Mama Bird and Hubs so my menu plan for the week is pretty lame. Hubs has Hunter Safety Class 2 nights this week so LJ and I will be taking the easy way out! I apologize.
Monday: Hawaiian Chicken
Tuesday: Broccoli & Cheese Soup {freezer}
Wednesday: Chicken Chili {freezer}
Thursday: Spaghetti {Best Bolognese Sauce Ever!}
Friday: Burgers

It’s Monday morning and I am wearing my thinking cap and scanning the freezer and pantry for meal ideas this week.
