Weekly Juggling Act


Yep, you read it correctly it says the weekly plan… not just a meal plan this week I am going to have a game plan! I have too. You know that saying “when it rains it pours”? Well, Mama Bird’s Nest Cupcakes & cakes business (side job)  is in turbo mode for next weekend!!! I have 4 parties to do! Here is my list.

1. Pony Party for Miss. O she will be 5!

2. Dinosaur Party for Mr. Q he will be 3

3. 40th Birthday Tiffany Box Cake

4. Ballerina Party for my niece Ava Grace who will also be 3!! Thank goodness her party is Sunday!

I am so excited!!


Now onto EATING!! What the heck are we going to have to eat this week? HT had lots of great sales and I stocked the fridge/freezer so here is my plan.

Monday~ Greek Salad with grilled chicken

Tuesday~ Mediterranean Chicken  (It didn’t make it to the crock-pot last week!!)

Wednesday~ Shrimp Surprise, the surprise is I am not sure what I plan to do with it! Check back Weds to see my new Recipe Link-up and what I created!


Thursday~ Leftover Buffet for the Boys!

Friday~ Pizza Night (Mommy’s Baking!!)

Pretzel Crusted Pork Chops and Lemon Basil Beans

This is a crazy creation that I came up with tonight and it was DELISH! I know it sounds funny but the combo is just perfect.

3 Pork Chops

1 egg

1 1/2  T mustard

1 T honey

10 pretzel rods, chopped fine in food processor

2 T parmasen cheese

Lightly beat egg, add mustard & honey, mix well. Pour over pork chops and marinate for 30 mins. Dip chops in pretzels & parm mix and place in hot pan. Sear for 3-5 mins until nice crust forms, flip and then slide pan in 350 oven and cook additional 30 mins* or until cooked. 


*cook’s note: My chops were thick and needed to cook a bit longer than normal.

Lemon Basil Green Beans


I found some beautiful French green beans, trimed the ends, blanched in water for 5 –10 mins drained the water and added 1 T butter, juice of 1/2 lemon & 3 fresh chopped basil leaves. I love beans this way! SO fresh, summery and crisp!! Contrary to what many believe green beans do not need to be cooked to death!!

Caramelized Onion & Bacon Quiche


It has been WAY to long since I made quiche. I love it but typically do not think about it unless I am planning brunch. My inspiration came from the bacon leftover from breakfast. This recipe will fill 2 regular size pie shells.

4 eggs

1 1/4 cup half & half

1 onion, sliced & caramelized

5-6 slices of crumbled crisp bacon

1 cup chopped broccoli

1 cup shredded cheese

Caramelize onions in 1 T butter & 1 T olive oil, saute on high for a few mins to get a golden color then add dash of salt and turn to low. After the are softened and looking yummy add 1 tsp balsamic vinegar. I know you are thinking a whole onion is alot but this:

P4110034 cooks down and turns into this:P4110035 Whisk eggs & half & half with salt & pepper to taste. Stir in broccoli, cheese, onions and bacon. Pour into pie shells add a little sprinkle of grated cheese to top and bake on 375 for 30 mins or until golden brown.

Menu Planning {from the freezer}


I have to start by telling you all that I am starting a weight loss journey tomorrow and my menu planning may not be as fun as it typically is as I will NOT be eating any of it!

I am cooking from the freezer ALL week long in hopes to make my first week a bit smoother. I have decided that it will be much easier to just include EVERYONE in on my DIET  life style change.

I watched FOOD INC and have been obsessed  slightly concerned with what we eat and with the fact that I have gained a lot of weight and I want to be healthy. I am STILL going to share lots of yummy recipes, I am just hoping to share some HEALTHIER OPTIONS.

I have LOST my mind! No, it was lost long ago sometime around the summer after graduation. If I tell the World my story then

Amazing Roasted Chicken

I am re-posting this as the 1st time I posted it I only had maybe 3 readers and it is a classic never fail dish! Please enjoy.

This is truly an award winning dish! I had been going to  to try and get ideas on what in the world to do with the abundance of cherry tomatoes that I have. I found a roasted chix recipe on epi that used fresh herbs & cherry tomatoes 2 things that I have a plethora of! The original recipe called for marjoram which ironically I do not have in my masses so I used fresh oregano and I think next time I may try using thyme then basil then well you get my drift this is so yummy I think as long as you use fresh herbs you can use any of them. I put a bit of a spin from their original recipe & it was a success!!! I would do this for Supper Club or any family it was awesome!! ENJOY!

Split Chicken Breast (bone in with the skin, I know I always use boneless/skinless, but the skin chars perfectly & seals in moisture)
Cherry Tomatoes about 2 cups (I used more)
2 Tb Balsamic Vinegar
Sea Salt
Crushed Red Pepper
1 Tb fresh herb; marjoram, basil, oregano, thyme, whatever you have!
Place Chicken breast on rimmed cookie sheet, drizzle with evoo salt & red pepper well. Allow to marinate a few hours or overnight. Then rinse & pat dry cherry tomatoes, drizzle well with evoo, salt, balsamic & fresh herbs. Pour on top of Chicken and place in 400 oven for 45mins. Allow meat to rest and top each piece of chix with the tomato mix making sure to get some of the juices.

Easy Swedish Meatballs

This is a great and super easy Swedish Meaballs that is family friendly! My Jack loves meatballs and using the turkey makes it a tish healthier.

Now let me start by saying that I make homemade meatballs but for this recipe I bought premade Turkey Meatballs. (don’t judge)

1 pkg Turkey Meatballs (HT has their brand as do Shadybrook Farms in the fresh meat counter)
2 pkgs of mushroom gravy (McCormick brand, apears to have less added junk)
2 c water
1 pt button mushrooms or 1 small can mushrooms
1c beef broth (I have used Chix & it worked fine)
4oz low-fat sour cream (stir in at the end)
8 oz egg noodles, cooked & drained

Follow pkg directions on gravy, add broth, mushrooms & meatballs- heat throughly- tastes even better if you let simmer on low for a few extra minutes! Or like today throw it all your crock pot and set to low, it’s great! Just before serving stir in sour cream and pour mix over egg noodles. Grab a salad and poof! Dinner in less than 30mins. Add Hubby & BJ LOVED it!! Enjoy! Mama Bird

Meal Planning

This week I am trying to use the pantry & freezer for all meals. I am praying that I will not have to go to the store except for possibly a visit to Trader Joe’s for some goodies for our weekend getaway! It might be a long week? I am so excited to getaway I can’t stand it!!!

Monday~Pepper Jelly Pork
Tuesday~ Fiesta Chili
Wednesday~ Taco Bake (fiesta chili leftovers)
Thursday~ Mommy Night Out (Pizza or leftovers for boys)

G’s Favorite Lasagna

This is an amazingly simple, crowd pleasing lasagna. It is so yummy! Your family & friends will love this! A few tips: 1. I use Barilla, no boil lasagna noodles 2. I use a 9×13 rectangle baker 3. my fav jarred spaghetti sauce is Ragu Organic or Trader Joe’s Marinara (use whatever you enjoy!)
2 jars of your favorite spaghetti sauce
1 can mushrooms
1 tsp each oregano, basil, garlic, salt & pepper
1 lb ground turkey, browned
1/2 lb italian sausage
1 onion, diced
1 Tb olive oil
2 cups chicken broth
1 8oz pkg cream cheese
1 pkg frozen spinach, thawed & drained
1 pkg shredded Italian cheese mix
Brown turkey & onion in olive oil, add seasonings, sauce, mushrooms. Heat broth & cream cheese, bring to slow boil & turn down to med-low and whisk until smooth. Layer dish with meat sauce, noodles, cream cheese, spinach, meat sauce, noodles, cheese DELISH!!!
