1 cup cheese (I used cheddar for this as it is what I had on hand swiss is really good too!)
fresh basil, apx 4 leaves chopped
juice from half lemon
Start with a prebaked pie shell. Allow to cool and put a heaping tablespoon of fresh pesto, spread all around pie shell. (You will be amazed how much flavor this adds to the dish!) While shell is cooling slice zucchini and squash and place in oven safe dish and roast on 350 for 8 mins. This just makes veggies tender and also removes some of the moisture they produce when they cook. lay them on a paper towel to remove any extra moisture so you don;t have a soggy pie! Then layer zucchini, squash, tomato and onion. Make topping mix cheese, mayo, lemon juice, zest and spices and spread over top. Bake 350 for 30 mins. or until golden brown. Allow to cool a little prior to cutting. It’s so YUMMY!!!
My good friend and college roommate came to visit this summer and made these refreshing summer treats for the boys and they were a huge hit with the kids and adults!! Super easy and with the fresh ingredients you can’t go wrong!
Ana’s Berry Pops
1/4 cup coconut water
1/4 cup POM juice
handful of frozen berries (we used raspberries & strawberries)
1-2 T honey
whip up everything in your blender, pour in popsicle molds and ENJOY! Feel free to get creative and use different fruits or juices!
This salad is so simple it seems almost silly to share, but it was so dang good I would be remiss not to!
Cut up all the fresh fruit you enjoy and pour this deliciousness over top, it will bring out all the juices from the fruit and make them look all shiny and beautiful! I used cantaloupe, strawberries & blueberries.
Honey Lemon Dressing
2 heaping tablespoons Honey
juice from 1 large lemon
4 large mint leaves, chopped
Whip it up, pour it over your fruit and something magical happens!
Mama loves some PESTO and I love making it and lots of it!! I have several basil plants just so I can make Pesto all summer long to stock pile it for the winter! I have had a few friends say that sometimes they think that Pesto can be a little strong so I add fresh spinach to my recipe in order to mellow the flavor a bit. Don’t worry it doesn’t change the flavor! I also use walnuts in lew of pine nuts as Hubs gets massive headaches from pine nuts and the walnuts don’t seem to bother him as much.
2 cups basil leaves
1 cup fresh baby spinach
3 cloves garlic
1/3 cup walnuts
1/2 cup olive oil
1/2 cup parmesan cheese*
In food processor add basil, spinach and garlic, pulse until combined; add walnuts and parm while pulsing slowly add olive oil through the tube. It’s that easy!!
* NOW if you are making a ton and want to FREEZE it DO NOT add PARMESAN. Place in freezer safe dish and lightly top with a layer of olive oil and it will freeze beautifully. Take out of freezer and add shredded parm to Pesto and ENJOY Pesto all year long!!
Ocean Isle is my favorite beach in the whole world! It is 7 miles long and a couple of miles wide and is just the most family friendly,lovely beach ever!! We stay in a house on the canal. All of our friends and all the kids love staying on the canal. It is like staying on a lake and being at the beach! You can crab and float and just have a great time.
Jack loves to crab and fish!
Sunset Slush is a highlight of Ocean Isle! And this is our buddy, he has been pushing that cart up and down the beach since forthe past 7 years! He is a senior this year at UNC Wilmington and we hope he will make it back to the beach at least one more summer!! Jack LOVES him and bless he ALWAYS remembers Jack and his friends!
Today I am sharing my favorite eats of the Beach. Most of these are local OIB spots, a few a just up or down the beach. Within a hour and obviously worth the trip if I am including them!!
Sugar Shack delish, fantab, yum-o Jamaican food. One of a kind restaurant. Don’t miss it!! Mom had the ribs, Hubs had wings, mini had a burger and I had fish. It was ALL so yummy. I would love to go in the kitchen and see how they prepare. It was all cooked perfect, the cole slaw was amazing as well and I don’t ever like slaw! 910-579-3844 MAKE RESERVATION!! Causeway Gourmet this is a great food! Gourmet to go- great pasta, salads, sammies. it’s fantab. Perfect for a great dinner in when you don’t want to cook!!
The Purple Onion (Shallotte) My fav breakfast spot. Omelets rock,fluffy pancakes. fresh fruit. fresh baked goods. The sammies are great too! FYI it takes a LONG time to get your food so don’t be in hurry! The food is worth the wait!! PROMISE!!
Twin Lakes(Sunset Beach) great seafood, great service, family friendly. everything everyone ordered was great. Hubs loved the stuffed flounder! Peach Ice Cream 2 cups half and half 1 cup buttermilk
4 whole peaches, peeled and sliced 3/4 cups of sugar 4 mint leaves, chopped 2 t vanilla 2 T lemon juice Toss peeled and sliced peaches with sugar and lemon juice, cover; refrigerate and let macerate at least for a couple of hours, preferably overnight or all day. Chop the peaches and mix with cream, buttermilk, mint and vanilla. Put in ice cream maker, turn on and ENJOY!!!!
I made a raspberry puree and drizzled over the top. And added a fresh mint leaf.
Almost every Friday we eat pizza (healthy, I know). Sometimes we order from our favorite, Frankie’s Pizza, sometimes we pick up a Wally World Special, and sometimes…. I make a homemade pizza! Tonight, I made an amazing pizza with roasted tomatoes, caramelized onions, buffalo mozzarella, and parmesan. It looked beautiful and tasted even better!!
1 thin pizza crust (Wallie World has a great all-natural crust in the deli for $2.50!)
1 cup marinara sauce or pizza sauce
1/2 roasted Vidalia onion
2 handfuls roasted cherry & grape tomatoes
slices of fresh mozzarella cheese
I spread my fav Trader Joe’s Marinara Sauce on the top and then just layered all my items. Then sprinkled a little extra virgin olive oil on top. Baked at 450 for 10mins. DELISH!!
