Sweet Potato Goodness

Let me start by saying that I know that you have seen boo-koos of sweet potato casseroles over this years but, if you are like me and don’t like a bunch of “stuff” added to it you will love this! It is so freaking yummy! It makes ahead beautifully.

Sweet Potato Goodness:

6 sweet potatoes, baked & skinned

1 1/4  c sugar

2 t vanilla

1 t cinnamon

1/2 t fresh nutmeg

3 eggs, lightly beaten

1/3 c milk

1 stick butter, melted

Bake & skin potatoes; Place in large bowl, add remaining ingredients and mix in Cuisinart or with a hand mixer until smooth & creamy.

Topping:

1 c brown sugar

1/3 c flour

1/3 c butter, melted

pecans halves

Mix sugar, flour & butter sprinkle 1/2 of mix lightly on top of potato mix. Place pecan halves on top of that and sprinkle remaining mixture on top. Bake at 350 for 25-35 mins until hot & bubbly! Enjoy!!

Sweet Potato & Pear Gratin

Thanksgiving is one of my favorite holidays! I LOVE to EAT and of course LOVE to cook!! Here is a great side dish that is simple enough to do any night of the week, but is yummy enough to add to your Thanksgiving Menu!

2 sweet potatoes, sliced thin

3 firm pears
3 Tb butter
2 tsp fresh ginger
1/3 c maple syrup
2 tsp lemon zest
1 Tb lemon juice
1/2 tsp salt

Boil potatoes 20-25 mins until tender/firm, drain & cool; melt butter, add ginger, stir in syrup, zest, juice & salt. In a greased dish alternate layers of potato & pear. Bake 15 min at 350 pour butter mix over top and bake additional 15 mins until golden.

Harvest Pork Tenderloin {Crockpot}

I was inspired this week to do ALL new recipes! I found a yummy looking pork recipe and thought it would be great. My goal was to use meat from the freezer and groceries I had on hand so as always I had to switch up the recipe a bit. 
Layer in the crockpot:
3 sweet potatoes, sliced med-thin
1 sweet onion sliced
1 t curry powder
Pork Tenderloin
1 to 2 T Steen’s Pure Cane Syrup (molasses or maple syrup would work)
1 t curry powder/ salt to taste
4 small apples, sliced
1/2 c dried cranberries
2/3 c chicken broth
I started this after lunch and turned the pot on high for 4hrs. Normally I would do on low all day. It was great! VERY FALL!! Loved it!

Big J’s Meatloaf & Roasted Sweet Potatoes

As a little girl, my Daddy did most of the cooking. He wasn’t a gourmet per-say, however what he made, he made well! This is one of those dishes that isn’t particularly innovative it is just a good meatloaf. Honestly I didn’t know how bad meatloaf could be until I went away to college. I am southern and my meatloaf is topped with ketchup not gravy to me gravy turns it into something like Salisbury steak or uh something I am not fond of. I hope your family will enjoy this recipe as much as mine does.

1 1/2 lbs of “meatloaf mix” (pork, beef & veal)
1/2 onion, chopped
1/2 c panko breadcrumbs
1 egg
2 Tb worchestershire sauce
2 Tb ketchup
2 tsp garlic powder
s & p to taste
I like to mix this all up together and let sit in fridge for a few hrs.
Topping:
1 c ketchup
1 Tb brown sugar
1 Tb vinegar
1 Tb mustard
Bake at 375 for 60-90 mins. May want to tent with foil for first 30-45 mins and remove for last half. Enjoy!!

Roasted Sweet Potatoes
peel and dice potatoes and toss with 2 T olive oil and 2 T your fav curry powder ( I like Madras which is a RED base as well as Dean & Deluca which is a YELLOW base) I also love to toss 1 T of Nigella Seeds (if you have, just adds another layer of flavor) I set oven on 375 and bake for apx 45 mins. Till fork tender. DELISH
